Have a Happy, Healthy Holiday: Put Yourself in Charge

By Judy Mitnick, MS, RD, CDE, Bon Secours In Motion Physical Therapy & Sports Performance

It's that time again: the time for parties, the time for family and friends, the time for food ... and more food, and more food. It's no wonder people often feel like someone else takes control of their eating during this time of year.
Millions of Older Americans Not Getting Enough Exercise
More than 25 percent of Americans who are 50 or older do not exercise regularly and are physically inactive, according to a new federal health report. As a result, millions of people are missing out on many health-related benefits linked to staying active.

Provider Spotlight

9600 Patterson Avenue
Richmond, VA 23229

Dr. John Clore is board certified by the American Board of Internal Medicine in both Internal Medicine and Endocrinology, Diabetes and Metabolism. For more than 30 years, he has focused his career on the diagnosis and management of persons living with diabetes and the training of providers who care for diabetes. His future efforts will build on this experience by expanding and improving the inter-professional care of diabetes in the community and across the Bon Secours Health System.

What do you enjoy most about being an endocrinologist?
There are many different and enjoyable aspects to endocrinology, but for me, understanding why people develop diabetes and hopefully how it can be prevented and treated has been my life's work. The opportunity to meet with individuals affected with diabetes and their family members to discuss the barriers which may prevent them from having better glucose control and then together developing new treatment strategies is a privilege which I do not take lightly.

Why did you choose Bon Secours Health System?
Bon Secours is a health care system that is clearly committed to its mission. I have been struck by how integral that mission is in every patient interaction and every strategic decision. I wanted to be a part of that mission. The care of individuals affected by diabetes requires a holistic approach and I could not have imagined a more perfect setting for innovative diabetes care than Bon Secours.

What do you enjoy outside of your work?
Although it could be considered work, interacting with the local and national diabetes community is for me an opportunity to stay connected. I also enjoy staying active, either with long rides on my bicycle or exercising inside when the weather is not amenable. And I have a growing crop of grandchildren who bring me joy and amazement every day.

Ingredients:
  • 1 lb. bottom round beef roast, cut into 1-inch cubes
  • 1 large Russet potato, cut into -inch dice (about 2 cups)
  • 1/4 cup all-purpose flour
  • 1 medium sweet potato, cut into -inch dice (about 2 cups)
  • 2 cups peeled, thinly sliced carrots
  • 10 oz. packaged, frozen pearl onions
  • 14.5 oz. canned, no-salt-added, diced tomatoes
  • 14.5 oz. canned, low-sodium beef broth
  • 1 cup water
  • 3/4 tsp. dried thyme
  • 1/2 tsp. ground black pepper
  • 10 oz. packaged, frozen peas
  • 2 Tbsp. dried parsley
Directions:
  1. Cut the bottom round beef roast into 1-inch cubes and add into a 4-to 6-quart slow-cooker bowl. Chop the potato into -inch dice, adding to the beef cubes, along with the flour. Use a spoon to stir mixture together.
  2. Cut the sweet potato into a -inch dice and thinly slice carrots. Add the sweet potato and carrots into the slow cooker bowl over the meat. Top with the pearl onions, diced tomatoes, beef broth, water, thyme, salt, and pepper.
  3. Cover the slow cooker with a lid and cook until beef is tender, about 10 to 12 hours on low heat or 5 to 6 hours on high heat. Right before serving, stir in the frozen peas and dried parsley. Cover and let peas cook, about 5 to 10 minutes. Serve.
