A great day here at 4 D Acres, one of those that we look forward to! The arrival of baby chickens. It is so much fun to see the baby chicks scurrying around their pen in the barn. We delayed getting our chickens this year as it was a very cold and wet spring - not conducive to raising our farm fresh fryers. The picture on the right is last year's chickens that are 5 to 6 weeks old.
We are going to have chickens processed on July 10 and these will be ready to sell at market about a week later.
Here is an update on a crop we are very excited about. They are called Pawpaws and are a native fruit. We have three trees and one of them has produced fruit. Out of eight pieces of fruit we have three left. All we have to do now is to keep these growing, ripen and pick them before the raccoons find them.

Emu Meat
A year ago we met Ngon Nguyen from Tennessee who was interested in getting started in raising emu as he had been bitten by a tick and now had an allergy to red meat. This is what he had to say in a recent email:
This is the same allergy I have had since 2003 which I talked about during the AEA convention last year. Other symptoms include heart racing and dizziness. This is also how I got into emu farming last fall. I have met several people locally who also have this allergy. When I found emu as a red meat substitute I was thrilled and amazed how good it was. I can't even eat jello or marshmellows as they both have gelatin which is from mammals. Real bummer! This allergy is reported to be spreading quickly throughout the country. There's thousands of documented cases already. I think the future is bright for emu meat.

Recipe: Chicken Quesadillas
4 flour tortillas
2 chicken breasts
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
2 slices process American cheese
Grill chicken in vegetable oil and slice into thin strips. Preheat skillet over medium heat. One at a time, lay a tortilla into hot skillet and sprinkle with 1/4 cup of each shredded cheese and 1/2 cheese slice on one side of the tortilla. Arrange about 1/4 cup chicken slices over tortilla on the same half covered with cheese. Fold over, and press gently with spatula. Cook until cheese is melted and slice each into 4 pieces. Use your favorite salsa if you wish, over the top or as a dip.
