How about a quick and easy chili for these hot summer months, and what do you do with your chili? Put it on hot dogs of course, mmm mmm good. You can use a soup pot or dutch oven for this recipe, not quite as good in a crock pot but give it a try if you want.
1 1/2 lbs ground sirloin 1 lg onion, chopped 1 can tomato paste 1/2 c ketchup 2 tsp Worcestershire sauce 1 tsp cider vinegar 1 tbs chili powder (or to taste) 1 serrano, seeded and diced (optional) 1/2 tsp nuoc nam (optional) salt and pepper to taste
Add beef to 2 c water and bring to a boil in a 4 1/2 quart dutch oven. Add onions reduce heat to medium and stir to break up meat. Add the rest of the ingredients and stir until tomato paste is dissolved and meat is broken up. Stir occasionally and keep at a low boil reducing heat as necessary until thick, about 15 minutes. If you really like the 'smooth' type of chili for your dogs use a stick blender or let cool and put in a blender until finely ground.
Total prep and cook time is maybe 25 minutes. Now all you need to do is cook your dogs, do what you do to the buns and put them all together with your favorite toppings for some summertime memories with friends and family. Of course you could always keep them to yourself too :) |
