Youth Video Presentation

There will be a video presentation of the youth groups trip to Boston between services on Sunday, May 18th at 9:30 a.m. in the parish hall.

Meals On Wheels Yard Sale

The Wolfeboro Area Meals on Wheels will be holding a yard sale on May 31st for the purpose of financially supporting our program. We are seeking donations of any items except clothes, books and electronics. A tax donation receipt will be given if requested. We will be collecting donations starting the first week in May. Please call Richard Frazier at 569-1317 for pickup or drop off information. 

Outreach Luncheon 5/22

The next outreach luncheon is Thursday, May 22nd and help is needed with setup, serving and cleanup. If you can volunteer, please contact Marge Morris at 569-6073.

Summer Fair  - July 19

Sign-up sheets have been posted for the Summer Fair. Please add your name to the booth you may be interested in. We would like to have a meeting of all the booth chairpersons between services next Sunday May 25. If unable to attend please feel free to call Pam or Harry Liedtke (544-8245) with any questions, suggestions or needs. On Sunday, June 1 after the 10am service we will be setting up the undercroft so that donations can be sorted starting June 2. If anyone can help on that day it would be much appreciated.

Cate McMahon's SCARLET CHICKEN - gluten free

made with same ingredients as original but adapted

for boneless and skinless chicken breasts

 

½ C dried cherries

½ C dried cranberries

4 plump half-breasts of chicken

1 ½ C orange juice

½ C dry sherry

¼ C brown sugar

2 t potato starch

 

Optional pre-treatment of chicken breasts:

Dissolve 1 T of cornstarch in 2 T water.

Add 1 T dry sherry. Stir until thoroughly mixed.

Marinate the breasts in this mixture an hour or so in a shallow baking dish, turning occasionally.

 

Put fruits in small bowl and cover with boiling water. Drain after 10 minutes and set aside.

In a heavy saucepan, dissolve 2 teaspoons potato starch in 1 tablespoon water.

Add the orange juice and the sherry and the quarter cup of brown sugar.

Mix thoroughly with whisk or spoon and bring mixture to a boil.

Simmer gently about 10 minutes. It should thicken a bit.

Add the drained fruit, and simmer another 10 minutes. Set aside.

In a heavy, preheated skillet with a bit of oil or clarified butter, brown the chicken  breasts 1 minute on each side.

Transfer to shallow baking dish (1 layer of chicken) and spoon the fruit mixture over and around the chicken.

Bake at 350 for 15 minutes.

When chicken comes out of oven, slice it across in about ½ " slices while it's in the pan and spoon fruit sauce over it. Serve immediately.

(Preheated plates or platters with sauce spooned over would be easiest, rather than individual casseroles; in any case the chicken needs to be sliced, diagonally in about half-inch pieces, otherwise each person may take a half-pound portion and we'll only be able to feed 30!)

 

Notes: This recipe feeds about 4. If you double it as we did for the seder meal, you may not need to double the brown sugar and the dry sherry; it seemed sweet enough. IF you buy chicken breast tenders, smaller pieces that were on sale at the local market as we did for Maundy Thursday, you don't need to slice across the chicken breasts, because they are already in serving size pieces. Also, the smaller tenders will be cooked in slightly less time. Feel free to adjust according to your instincts! Serve with rice or couscous.


Clearlakes Concert 5/17

Clearlakes Chorale Spring Concert: Saturday May 17rh at 7:30 pm and Sunday May 18th at 2:00 pm. Both concerts are at St. Katharine Drexel Church. Featured will be Stabat Mater by Pergolesi as well as selection of choral works by Mozart, Faure, Haydn, Dvorak Beethoven, Bruckner, Palestri, Sartori and other celebrating family, spring and new birth. Tickets can be purchased at Black's and Made on Earth in Wolfeboro.

Flower Delivery Team Members Needed

Lynne Slocum and her Flower Delivery Team are in need of more volunteers to deliver flowers to our home bound parishioners and friends. This can be done on Sunday or Monday. If you wish to learn more about this important ministry, please call Lynne at 569-6438. Thank you.

Food Pantry Needs

Thank you for remembering Life Ministries Food Pantry. We welcome donations of non-perishable items. Please place them in the basket in the narthex. Other items needed are supplies for babies and mothers (diapers size 3-5, wipes, toothbrushes/paste, personal hygiene items, shampoo and clothing for children).
