Newport Skates MLK Day Performance

     

Newport Skates hosted Olympic medal winners and national champions for a special performance on Martin Luther King, Jr. Day. Two-time bronze medalists Sinead and John Kerr, two-time National Champion of Thailand Taryn Jurgensen, and U.S. Jr. Men's National Champion Aaron Gillepsie were some of the skaters that delighted the crowd. Meet Emily Zhang

10-year old Emily Zhang performed to Phantom of the Opera's "Angel of Music" at the Newport Skates' MLK Day show. The talented skater, and Newport resident, took time to answer some of our questions.

How long have you been skating, and what got you into it?
I first stepped on to the ice at Newport Skates at the age of three. I started taking lessons at the age of five. Skating is one of my favorite things to do because when I am on the ice I feel free and it's like I can do anything.
What was your inspiration for your Newport Skates performance?
I chose to perform this program because I love the music and I've read the book so I understand the story really well and I just feel comfortable doing this program.
Can you describe your all-time favorite performance?
My all-time favorite performance was at my first regional championships in 2013. I was really proud of myself because not only did I perform the same as what I usually did in practice, I might have even done better.
What advice would you give other children who want to start ice skating?
It's a good idea to give everything a try, so I suggest trying skating. If you like it, keep going and work hard. If you don't, don't hide it. It's not a good idea to do something for the sake of doing it.

Chef Ryan DePersio's Pork Belly Chili Recipe


Battello's Chef Ryan DePersio shared his favorite chili recipe with the New York Post, and we're drying to try it. Click here for the video and recipe details.

1 lb. ground pork
1 lb. ground veal
3 cups cooked pork belly (cut into 1�-inch batons)
2 onions (small dice)
2 green bell peppers (small dice)
2 poblanos (small dice)
1 tbsp. chopped garlic
1 cup canned black beans (rinsed)
1 12-oz. bottle of beer (lager or pale ale)
8 oz. canned crushed tomatoes
3 cups chicken stock
1 cup picked cilantro leaves
1 cup sour cream
Fresh lime wedges
2 cups shredded white cheddar
3 tbsp. canola oil
1 tbsp. unsalted butter
5 tbsp. masa harina mixed with � cup of water and tbsp. chili powder

Place a large pot on high heat and add oil. When pan is hot, lower to medium heat and add pork belly batons. Render down slowly and brown. Once they are crispy, add ground pork & veal to pan and caramelize as well. Cook for 10-15 minutes, stirring every few minutes.

Add onions, peppers, poblanos and cook for another 10-15 minutes. Stir in garlic and deglaze with beer. Cook beer down by half. Add stock, beans & tomatoes and simmer on low for 20 minutes. Stir in masa harina mixture a little at a time to thicken. Serve hot in a cup with a teaspoon of sour cream, a pinch of cheddar and a few cilantro leaves. Squeeze lime over top.
