The Dane County Farmers' Market (DCFM) continues to offer the area's largest selection of locally produced agricultural products. Whether you're looking for a holiday ham or decorations for your table, you can find it at this Saturday's DCFM.
For patrons enrolled in the FoodShare program, it's simple to buy groceries at the market. Simply stop at the EBT table next to the DCFM info table near the market entrance.
Vendor Updates Cindy Fricke from Cherokee Bison Farms emailed to let us know that they will be attending this Saturday's market.
Likewise, Audrey Biersach from Hickory Nut Heaven dropped a line to say that she and Bob will be attending this week's market, their last for the winter season.
Bill Warner from Snug Haven Farm emailed to say that they will not be at the market this Saturday, but will be returning next Saturday, December 21.
We stopped by to visit Pedram Salman of Jamie's & Son Bakery this past Saturday. Known for their baklavas, flat breads, Persian toffee, rice cookies, and more, we were delighted to see that Pedram is now offering bagels. To our knowledge these are the only bagels sold at the market.
We took home some "Everything" bagels, which were chocked full of crunchy goodness, as well as some blueberry bagels. Both were delicious.
Pedram says the cinnamon raisin are extremely popular and usually sell out first. So stop by early for the best selection.

... We Get A Little Cheesy!
Fannie Farmer's Classic Baked Macaroni & Cheese; Scalloped Potatoes and Ham

[Editor's Note: This dish is up there in the hierarchy of comfort foods. Consult your favorite DCFM cheese maker for the variety or mix of cheeses to use with this recipe.] by Carla Serves: 4. To me Fannie Farmer's recipe is the only "real" macaroni & cheese. It's from my 1946 edition of "Fannie Farmer's Boston Cooking School Cookbook." With time on its side this recipe is hands down the best for traditional, homemade baked macaroni & cheese - comfort food. Ingredients- 1 (8 ounce) package macaroni
- 4 tablespoons butter
- 4 tablespoons flour
- 1 cup milk
- 1 cup cream
- 1/2 teaspoon salt
- fresh ground black pepper, to taste
- 2 cups cheddar cheese (or other), shredded good quality
- 1/2 cup breadcrumbs, buttered
Instructions- Preheat oven to 400.
- Cook and drain macaroni according to package directions; set aside.
- In a large saucepan melt butter.
- Add flour mixed with salt and pepper, using a whisk to stir until well blended.
- Pour milk and cream in gradually; stirring constantly.
- Bring to boiling point and boil 2 minutes (stirring constantly).
- Reduce heat and cook (stirring constantly) 10 minutes.
- Add shredded cheese, little by little and simmer an additional 5 minutes, or until cheese melts.
- Turn off flame.
- Add macaroni to the saucepan and toss to coat with the cheese sauce.
- Transfer macaroni to a buttered baking dish.
- Sprinkle with breadcrumbs.
- Bake 20 minutes until the top is golden brown.
- (You can also freeze this recipe in zip-lock bags for later use. Once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer. I generally pull it out the night before and allow macaroni and cheese to reach room temperature. I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling.

Servings: 8
Ingredients
- 1/2 cup butter
- 1/2 cup flour
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 3 cups milk
- 3 cups ham, cooked
- 1 large green pepper, chopped
- 1 large onion, chopped
- 1/2 cup cheddar cheese, shredded
- 5 cups potatoes, pared and sliced
Directions
- Melt butter in large sauce pan over low heat; blend in flour, salt, and pepper.
- Cook, stirring constantly, for about 1 minute. Remove from heat gradually stir in milk.
- Return to heat; cook until thickened and bubbly.
- Fold in ham, onion, green pepper and cheese. Pour over potatoes in a large bowl.
- Stir gently, then move into a buttered 13 by 9-inch baking dish; cover with foil.
- Bake at 350 degrees for 30 minutes.
- Uncover and continue to bake for 1 hour.
- Let stand for 10 minutes before serving.

SNAP/EBT Services The DCFM works with the Community Action Coalition to operate the SNAP/EBT services. Volunteers are needed to staff the table. This is an important service that hundreds of people depend upon so that they can buy their fresh, local, groceries from the DCFM. Next Week Last Market of 2013;
January 4 First Market of 2014
Next week will be the last market of the year. There will be no DCFM on the Saturday following Christmas, December 28.
The DCFM begins the second indoor session at the Madison Senior Center, 330 West Mifflin St.

While DCFM Gift Certificates can be purchased at any time through the web site, the Monona Terrace session offers the only opportunity to purchase them at the market.
This Week's Music

The Mid-Town Jazz Band with clarinet, saxophone trumpet, piano, drums, guitar, bass and a singer plays traditional jazz, including creative solo improvisations. No two concerts are alike. Who knows what will happen at 8 am? Plan to pull up a chair and enjoy the harmonies and rhythms, or just browse the market to the beat of some of your favorite old tunes. Players are Jim Obrien, Jim Keeney, Allen Barkoff, Norm and Marion Beachley, Dan Hoke, Marilyn Carien, and Nancy Ivey Kendricks. Playing from 10:00-12:00Water Street Bridge is a trio that plays traditional and original folk, blues, shanty, old-time, Celtic, Americana, Balkan, Slavic, and Creole songs. Composed of Jon Baade, James Kuehl, and Richard Miller, their instruments include guitar, resonator guitar, mandolin, squeeze box, ukulele, banjo, washboard, tupan, bodhran, bones, and doumbek. Other musicians often sit in so you never know who will be "under the bridge." They bring diverse musical backgrounds, humor, songwriting, and musical skill together for fun, danceable, energetic performances with something for everyone.
