Stock Up with Local Products
for Thanksgiving!
This Dane County Farmers' Market (DCFM) before Thanksgiving offers you a great opportunity to stock up for the holiday.

If you haven't ordered your turkey there may still be some available from DCFM farmers. There will be six turkeys vendors at the market. Volunteers at the DCFM information table are available to help you locate a turkey if you haven't preordered one. If you have preordered a turkey, the DCFM volunteers can help you find your vendor.

Sweet potatoes, leeks, spinach, arugula, carrots, and much more are available at this week's market. Fine cheeses, bakery products and meats can be found at the market.

Along with a few available turkeys from several vendors, you can find duck, goose, and rabbit at Krinke Market and other producers. Fine beef, emu, chicken, pork, and lamb are also available. Artesian Trout Farm offers fresh and smoked trout along with smoked salmon.

There are plenty of apples from numerous vendors. Green's Pleasant Springs Orchard is now offering apple sauce.

Don't forget the many flowers and table decorations available at the market.

There are now two home made soap vendors at the market, Brantmeier Family Farm and Sylvan Meadows Farm.

There will be 80 vendors at this week's market. That is a very strong showing! This large number of vendors presents an excellent opportunity to enjoy a wide selection of locally produced ingredients, decorations, and flowers.

Have a wonderful Thanksgiving holiday. Make it even better with ingredients from the DCFM.

This butternut squash soup has converted many non-squash believers into squash lovers. A crowd-pleaser for the holidays, this soup can be made ahead of time and reheated right before serving. The apple cider cream is so delicious that I usually double that part of the recipe, because it disappears fast! Buy a fresh loaf of crusty bread from the market to accompany this dish.

Serves 10.

Ingredients
  • 2 1/2 pounds butternut squash
  • 2 Tbsp butter or sunflower oil form the market (olive oil can also be used)
  • 2 cups chopped leeks (white and green parts only)
  • 1/2 cup diced, peeled carrot
  • 1/2 cup diced celery
  • 1 Tbsp minced garlic
  • 2 small Granny Smith apples (or other tart apple) peeled, cored, and chopped
  • 1 1/2 tsp dried thyme
  • 1/2 tsp crumbled dried sage leaves
  • 5 cups chicken stock/broth or vegetable broth
  • 1 1/2 cups apple cider, divided
  • 1/2 cup whipping cream, optional
  • Chopped fresh chives, roasted pepitas, and/or crumbled bacon for garnish

Instructions
  1. Roast the butternut squash: Pre-heat oven to 400 degrees. Cut the butternut squash in half length-wise and remove the seeds. Drizzle both halves with a little oil, and roast cut side down until a knife can easily pierce the squash - about 25-30 minutes; longer if the squash is larger. Let cool, then peel and chop into 3/4" cubes.
  2. In a large pot, heat butter or oil over medium-high heat. Add leeks, carrot, and celery; sauté until softened, about 15 minutes. Mix in garlic, apples, thyme, and sage. Give a quick stir, then add the cubed roasted butternut squash. Lastly, add the stock and 1 cup apple cider. Bring mixture to a boil, then reduce heat to medium-low. Cover and simmer until apples are tender, stirring occasionally, about 30 minutes. Let cool slightly.
  3. Working in batches, purée soup in a blender (or use an immersion blender to purée the soup directly in the pot). Return soup to pot.
  4. In a small heavy saucepan, boil remaining 1/2 cup apple cider until reduced to 1/4 cup, about 5 minutes. Cool. Place sour cream in a small bowl and whisk in reduced cider. [Soup & cider cream can be made, up to this point, 1 day ahead. Cover separately and refrigerate.]
  5. Bring soup back to a simmer, then mix in whipping cream. Season with salt & pepper if needed. Ladle soup into bowls, and drizzle with cider cream. Top with chives, pepitas, or crumbled bacon - or serve them separately, and let your guests decide what garnishes they want!

Ingredients

  • 1 small onion, diced
  • 1 pound mushroom, sliced
  • 2 tablespoons sunflower or olive oil
  • 4 sheets premade puff pastry, squares (4 x 4-inch)
  • 1 cup turkey stuffing, cooked (leftover)
  • 1 pound turkey meat (leftover)
  • Salt and pepper, to taste
  • 1 egg, beaten
  • 1/4 cup milk
  • Gravy     (leftover)
  • Cranberry sauce (leftover)

 

  

Directions

  1. Saute onions and mushrooms in oil 4 to 5 minutes; set aside.
  2. Place 1/4 cup leftover Thanksgiving turkey stuffing in the center of 2 puff pastry squares.
  3. Top the stuffing with 1/4 pound leftover turkey pieces.
  4. Top turkey with sauteed mushrooms and onions.
  5. Add salt and pepper to taste.
  6. Beat together egg and milk.
  7. Place remaining 2 puff pastry squares over filling and seal with the milk and egg wash.
  8. Bake at 375 degrees for 20 minutes or until golden brown.
  9. You can serve this Thanksgiving Turkey Wellington with heated Thanksgiving gravy on top with cranberry sauce and your favorite vegetable.
  10. Enjoy!

SNAP/EBT Services
The DCFM works with the  Community Action Coalition to operate the SNAP/EBT services. Volunteers are needed to staff the table. This is an important service that hundreds of people depend upon so that they can buy their fresh, local, groceries from the DCFM. DCFM Producers ... So Much to be Thankful For 
While we prepare for the Thanksgiving holiday, with a day off for relaxation, great food, and wonderful company it's important to remember the life of so many who sell at the DCFM. Whether they are making the cheese, harvesting the vegetables, tending the animals, or baking the bread, producing food is a lot of work.

The cows still need to be milked, the vegetables harvested, and the eggs collected, holiday or not. For many DCFM vendors a trip to visit relatives or a full day of relaxation is just not possible.

We rarely hear DCFM vendors complain about their chosen profession. They know what it takes to be successful in their business, accepting an often intrusive schedule as par for the course. We know that they'll come to the market offering the very best in locally produced ingredients.

A small part of the thanks that we give this Thanksgiving holiday should go to the DCFM producers. They bring so much good to our lives. They're not expecting to be thanked, yet they do appreciate a few nods of acknowledgement to their job well done.

Onadare started 16 years ago by some neighbors and friends around Elmside Circle Park on Madison's East Side. The current band members include Janet Chen, mandolin; Betty Chewning, flute; Mike Duffy, piano and bodhran; Lou Host-Jablonski, fiddle and Scottish small pipes; Brian Mott, accordion; Terry O'Laughlin, guitar and octave mandolin; and Nancy Zucker, fiddle.

 

Onadare primarily plays music from various Celtic traditions with a smattering of other folk music. They can be seen every third Tuesday at the Malt House, 2609 East Washington Ave.
