Last Outdoor Market of the Season
For the last outdoor market of the season we're expecting unseasonably warm weather. This makes it a great opportunity to start your Thanksgiving grocery shopping.

What better way to celebrate the holiday than serving your family and guests locally produced ingredients from the Dane County Farmers' Market (DCFM). From apples to zucchini, it's all available at the DCFM. When selecting produce, cheese, bakery, or meats, the one who sells it is the one who produced it. DCFM sellers encourage your questions and feedback.

Saturday, November 17 marks the first indoor market of the season. Held at Monona Terrace, gift and decorative items will be available along with the usual food products.

Vendor Briefs:
Just in time for Thanksgiving, Cabibbo's Bakery will have a supply of semolina bread cubes at this week's market. Joe Cabibbo says the cubes, "Have a great taste and make a wonderful stuffing." We have used them and can attest to their value as a stuffing.

This will be the only market before Thanksgiving at which the cubes will be available. Cabibbo's Bakery will not be at the November 17 market.

Dorothy Priske from Fountain Prairie Inn & Farms dropped us an email to say: "I want to let you know that Fountain Prairie will NOT be at the first two indoor markets (November 17 and 24).  We'll be taking off on November 17 -- opening day of deer season is a holiday in the Priske family.

"We will also miss the market on Nov 24 -- our house will be overflowing with family in town for Thanksgiving.  People can stock up on our terrific dry-aged Highland beef this week. There is a rumor of some great end-of-season specials!  Thanks!

Ingredients
  • 1/2 large sweet onions, chopped or 2 scallions, thinly sliced
  • 1-2 teaspoon sunflower oil (or canola or olive oil)
  • 2 tablespoons curry powder
  • 1 tablespoon cumin
  • 1 teaspoon cinnamon
  • 10 ounces fresh spinach, washed, stemmed and coarsely chopped
  • 2 large sweet potatoes, washed and diced (about 2 pounds) Peeling is optional.
  • 1 (14 1/2 ounce) can chickpeas, rinsed and drained
  • 1/2 cup water
  • 3 medium tomatoes diced
  • 1/4 cup chopped fresh cilantro, for garnish
  • Basmati rice or brown rice, for serving

Directions
  1. You may choose to cook the sweet potatoes however you prefer. I like to chop and steam mine in a veggie steamer for about 15 minutes. Baking or boiling works well too.
  2. While sweet potatoes cook, heat 1-2 teaspoons of  oil over medium heat.
  3. Add onions and sauté 2-3 minutes or until they begin to soften.
  4. Next, add the curry powder, cumin, and cinnamon. Stir to coat the onions evenly with spices.
  5. Add tomatoes with their juices, and the chickpeas. Stir to combine.
  6. Add 1/2 cup water and raise heat up to a strong simmer for about a minute or two.
  7. Next, add the fresh spinach, a couple handfuls at a time, stirring to coat with cooking liquid.
  8. When all the spinach is added to the pan, cover and simmer until just wilted, about 3 minutes.
  9. Add the cooked sweet potatoes to the liquid, and stir to coat.
  10. Simmer for another 3-5 minutes or until flavors are well combined.
  11. Transfer to serving dish, toss with fresh cilantro, and serve hot.
  12. This dish is nice served over basmati or brown rice.

Ingredients
  • 1/2 cup butter
  • 1/2 cup flour
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 cups milk
  • 3 cups ham, cooked
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 1/2 cup cheddar cheese, shredded
  • 5 cups potatoes, pared and sliced


Directions
  1. Melt butter in large sauce pan over low heat; blend in flour, salt, and pepper.
  2. Cook, stirring constantly, for about 1 minute. Remove from heat gradually stir in milk.
  3. Return to heat; cook until thickened and bubbly.
  4. Fold in ham, onion, green pepper and cheese. Pour over potatoes in a large bowl.
  5. Stir gently then move into a buttered 13X9 inch baking dish; cover.
  6. Bake at 350 degrees for 30 minutes.
  7. Uncover and continue to bake for 1 hour.
  8. Let stand for 10 minutes before serving.

If you stop by the Wetherby Cranberry Company stand you're likely
to see this photograph. If you look closely you'll note that it's an aerial
photo of a couple of the cranberry bogs. On the left the cranberries have been corralled into the shape of Wisconsin. In the lane between the bogs Jim and Nodji have constructed the word "vote." On the right, the blue water of the bog represents the state, surrounded by a matte of cranberries.

This is not the first time the Van Wychens have used their
cranberry bogs as a huge Etch A Sketch. Ask them about
the American Flag ... oh, and the blue water..
