HAPPY MAY, FLASHERS!
Yes, the month of May has begun and what a busy month it will be! Today is Cinco de Mayo. This day celebrates the victory of the Mexican army over the French army on May 5, 1862. Since the French army was considered the best in the world at that time, the victory was a major source of pride for the Mexican people. Over the years, it became a reason for many Latin people to celebrate and the theme is now a good reason for all people to turn on the Salsa music, do a Mexican hat dance, stir up a Mojito and eat Mexican food! After all...who doesn't love a good party? In our recipe of the week below, you will find a different type of taco recipe that would be great for a party or just the family. 

Next, on Saturday we celebrate the 142nd running of the Kentucky Derby. Below you will find the schedule to watch it on TV. I've told you in the past that our family and friends usually get together to watch this all-time favorite horse race! This year promises to have a crowded field of horses with as many as twenty or more running. At our family party, we don't let anyone pick their horse 'cause everyone would want the favorite, so we each put in a dollar or two, draw numbers from a hat, and the winner gets the 'pot'. It's a fun and easy way to have a party. We just pick up fried chicken and all the 'fixins.' Mom usually mixes up some Mint Juleps, the official drink of the Derby, but this year she's planning on serving Mojitos, probably left over from her Cinco de Mayo celebration. In case you're not familiar with a Mojito, (pronounced Mohito) it's a mint flavored drink similar to the Julep, but it's made from light rum rather than bourbon whiskey. You can make them from scratch using real mint leaves, but there is a delicious Mojito mix available at many stores. Just add rum to the mix as directed and garnish with a sprig of mint.

And speaking of Mom, I can't forget to say Happy Mother's Day to all you Moms this Sunday. Yep, Sunday, March 8th is Mother's Day. What a way to wrap up a week full of fun! Our Season has been coming to a close here the last few weeks, but it seems there is still an awful lot going on and our calendar is full, so get out there Flashers and enjoy yourselves...and take Mom along too! A special Happy Mother's Day to my Mom! As you FLASHERS know...she is my inspiration, my turn to gal, my adventurous soul mate, my role model ... She is simply amazing!  Love YOU Mom!

Cinco de Mayo is one of the biggest days of year for recreational drinking. No matter what...DO NOT get behind the wheel! AAA and Budweiser have paired up and offer a Tow to Go service. This service is confidential and offers a ride within a 10 mile radius to a safe location. It is free and available to both AAA members and non members. The AAA tow truck takes the vehicle and the driver home. Please share this site with anyone that you think might be in need of this service. Come meet Terry Meer, is our great Permaculture Director at Sustainable Kashi where we are creating a sustainable environment for the future of our community with chickens, goats, bees, vegetables and fruits. This market we are featuring carrots, onions,parsley, basil, chard, chives, eggplant, peppers, lettuce, dill, arugula and radish.  All organic, fresh from our farm!

Need help getting started with your family history research? The Indian River Genealogical Society (IRGS) offers free 3 session Beginner Classes every month! Instructors from IRGS, will be teaching you how to gather and organize your family information, as well as navigate through genealogy research on the Internet. Upcoming class dates are May 14, 21 and 27; June 11, 18 and 24; July 9, 16 and 22; August 13, 20 and 26.
 
The first and second class is held on the designated Saturdays from 10:00AM - 12:00PM and the third class is held on Friday from 9:00AM to 11:00AM (this is the hands-on internet class). Classes are held in the History Meeting Room, on the 2nd floor of the IRC Main Library, 1600 21st Street, Vero Beach. It is recommended that you participate in all three classes in order to get the full benefit.
 
This class is FREE, however, limited to 15 people per session. Please sign up early to ensure you have a seat! Call the Society at 772 444-7470 to leave your name and phone number for a call back to confirm your place. There are also sign-up sheets on the IRGS table in the Genealogy Department of the Indian River County Main Library. Can a chair become valuable if it is used by a famous person? In the early 1900s, people often put a name plate on a chair that had been used in their home by a president or king. Harry Potter author, used a 1930s oak chair and donated it to a charity auction in 2002 after she painted it with the pink, gold and green words, "You may not find me pretty but don't judge on what you see." It brought about $2,100. The chair was sold again in 2009 for $29,117. Last month, on April 6, 2016, it was sold again by Heritage Auctions for $394,000. Rowling sold over 450 million books and adapted the books for eight films. Her fame made the old chair a treasure.

RECIPE OF THE WEEK
 TACO CRESCENT RING
 
Ingredients
1 lb ground beef 
1 package (1 oz) Old El Paso™ taco seasoning mix
1 cup shredded Cheddar cheese (4 oz)
2 cans (8 oz each) Pillsbury™ refrigerated crescent dinner rolls
Shredded lettuce, chopped tomatoes, sliced ripe olives, taco sauce or salsa, as desired

Directions
Heat oven to 375�F. In 10-inch nonstick skillet, cook beef until no longer pink. Add taco seasoning mix and 1/2 cup water. Simmer 3 to 4 minutes or until slightly thickened. In medium bowl, mix beef mixture and cheese. To put it all together, watch this simple step by step video. Click here.

Once again the Saint Helen's Knights of Columbus showed their community spirit!  Chancellor Eddie Boatwright and Financial Secretary Ed Boesch, arrived at The Arc of Indian River County with two $4,763 checks.  Accepting the check for The Arc, Executive Director Chuck Bradley said "Every year we are thankful to the Knights of Columbus for choosing The Arc as one of the benefactors of the Tootsie Roll Drive.  This year the money will help underwrite some of the expenses incurred in the oyster mat production our clients assemble in the Adult Day Training program." Eddie Boatwright commented "It's a good feeling to give back to the community and help those in need." 
The Arc is a Non-Profit, 501 (c) 3 agency, dedicated to meeting the needs of people with developmental disabilities in Indian River County. For information on The Arc, please call 772.562.6854, ext 219.
