HAPPY THURSDAY, FLASHERS!
Do you remember the song from the musical 
South Pacific titled "
I'm only a cock-eyed optimist?" Or how about those lines from the Unsinkable Molly Brown
when Molly shouts to her brothers
, "I ain't down until I say I'm down!" I love those shows and I love their message because I guess I've 
always been a "cock-eyed optimist" myself. I always expect things to turn out well...That's a gift I inherited from my mother. Sure, I've been disappointed sometimes, but I always think tough times don't last...tough people do! So...NEVER give up! One of my mother's favorite little things to recite to us when we were growing up is by an anonymous optimist. Perhaps you know it.

The optimist fell from the twentieth floor
But as he passed each window bar
He shouted to the folks below
"All right so far!"

Now, in case you're wondering about why I'm sounding like Pollyanna it's because I'm trying to get us off to a good start for the new year. In this issue
you'll find a lot of upbeat posts and ideas and entertainment. You'll read that Gabby Giffords is coming to the Emerson center to tell her amazing story. (Talk about an optimist! Wow!) And be sure to check out the inspiring documentary Girl Rising that's coming to the Majestic Theater, and the 'feel good' musical Chorus Line about making it on Broadway at the Riverside, - --and much, much more. I hope all of you will join me in one more resolution, - to be more optimistic this year. Remember the power of positive thinking. Let's expect good things to happen and maybe, just maybe, they will!

This market we are featuring organic bok choy, carrots, radishes, moringa (edible very delicious green leaf used as a lettuce), lettuce, papaya, kale, parsley, dill, eggplant plus many other delectable and organic veggies and fruits.

 2016 National Championship


Clemson
vs Alabama
The 2016 College Football National Championship features the Alabama Crimson Tide against the Clemson Tigers. Alabama is 13-1 and ranked 2nd in the College Football Playoff rankings. The Crimson Tide crushed No. 3 Michigan State 38-0 in the Goodyear Cotton Bowl to advance to the championship game, but Clemson is ranked No. 1 as the only undefeated team in college football this season.
The University of Phoenix Stadium is hosting the  Championship game. It will be aired on ESPN at 8:30 on Monday, January 11.

Folksinger Peter Yarrow will kick off the three-part 
Masters of Music Series at The Emerson Center. 
His performance, co-sponsored by East Coast Lumber and Indian River Magazine assures a memorable evening of music, camaraderie and "Puff's special magic" for everyone, young and old alike. Peter's music and songs resonate with a history that he and his musical compatriots, Paul and Mary, not only helped to write, but one that has changed and inspired millions to continue to keep on keepin' on, hold firm to principle, and not be deterred in the face of adversity.
 
Something special occurs when Peter famously brings an audience together in song, creating a caring community in a way that only folksingers can. As an homage to the "Coffee House" era, a complimentary coffee bar, courtesy of Einstein Bagels in Vero Beach, will be made available for guests to enjoy prior to entering the auditorium.

Looking ahead, The McCartney Years (the foremost Paul McCartney Tribute Band) will be on The Emerson Center stage on Thursday, February 11 and The Iconic Kingston Trio on Friday, March 4th.

The series launches on January 16 with two distinguished Americans who survived an unthinkable ordeal.  The husband-and-wife team of Congresswoman Gabby Giffords and Astronaut and U.S. Navy Captain Mark Kelly will take to the Emerson Center stage to recount the miraculous details about Giffords' would-be assassin attack and the ongoing journey they have shared of strength, courage and determination. They will share stories that will amaze you, inspiring others to be their best while reaffirming what courage is all about. Individually and collectively, they exemplify leadership, the importance of teamwork, and courage under pressure. The event is sponsored by Indian River Estates, an ACTS Life Care Retirement Community.

Do a Google search for great graduation speeches and give it a listen. There you will find words of wisdom and motivation!  Here is one that we've run before and I believe is worth sharing again. Admiral William H. McRaven is a Navy SEAL...A member of our military who has completed what is considered to  be the toughest military training in the world.

RECIPE OF THE WEEK
WHITE CHICKEN CHILI

Here's a quick meal for those busy days, and at only 270 calories per serving, it's a delicious diet bargain!

 

Recipe Details

Prep Time: 15 minutes, Cook Time 25 minutes, Serves 6-8

 

Ingredients
2 cans (15.5 oz) BUSH'S White Chili Beans, undrained
1 can (10 oz) diced tomatoes and green chiles, undrained
1 can (14 oz) reduced sodium chicken broth
1 can (10.5 oz) cream of chicken soup
1-2 medium jalape�os, sede and diced
1 cooked rotisserie chicken, shred meat from bone

Optional Toppings:
Shredded mozzarella or cheese of your choice, sour cream, cilantro, tortilla strips, avocado, lime wedge 
Directions:
In a 4-quart stock pot, add 1 1/2 cans of BUSH'S White Chili Beans, mash the remaining 1/2 can chili beans with a fork and add to pot. Add remaining ingredients. Bring to a boil reduce heat and simmer 10 to 15 minutes stirring occasionally.

 

NOTE:  You may add a can of corn if you choose. The meal is good served with cornbread and a green salad.

The EL-DOEs from the Sebastian Elks Lodge distribute Christmas baskets every year to families from Sebastian Elementary School. The EL-DOEs membership donates money to purchase items for the baskets then Mrs. Trish Wesely, the Historian of the EL-DOEs, does the shopping and assembles the baskets.  Each of the baskets contain items for a true Christmas dinner. They include a turkey, staples, vegetables, stuffing, cranberry sauce, drinks, dessert and decorations for the table.

This year Sue Fuchs, President of the EL-DOEs presented the baskets to Tony Adkins, Student Support Specialist at the Sebastian Elementary School.

Main Street Vero Beach is proud to announce that Elaine Jones is the new executive director starting Jan 4th, 2016. Elaine has worked part time since June 2014 and has been a tremendous asset to the Main Street program. She is well liked in the community, and her warm & generous demeanor has contributed, along with the very active board, to making Main Street Vero Beach the success it has become today. Elaine is a BellSouth retiree of 32 years and a Vero Beach resident since 1979. She helped form the new Vero Beach Oceanside Rotary Club in 2009. She organizes big fundraising projects such as the famous Wild Game Feast, Community Service Projects including Veterans Socials and of course club parties. She is involved in many other aspects of our community and Mainstreet will thrive under her leadership

You can reach Elaine Monday through Friday from 10-4pm ~ 772.643.6782. Main Street is located at 2036 14th Avenue. The street is open this Friday night for the monthly Gallery Stroll that was postponed a week because of the inaugural New Year celebration last Friday.

CALLING ALL ARTISTS
Art By The Sea is a Prestigious Exhibition by Members of the Vero Beach Art Club and the Vero Beach Museum of Art and is being held Jan 22-24. It is held in the beautiful Holmes Great Hall at the Vero Beach Museum of Art, this show offers artists a chance to show one piece each of their artwork, all available for sale. A percentage is donated to the Vero Beach Art Club to support their educational outreach programs such as the scholarships they award to high school seniors and the donations they give to Elementary Schools, Middle Schools and various art classes in Indian River County. Last season's show sold 23% of all the artwork on display at the show, it was an incredible success and the artwork was considered to be outstanding.
