HAPPY THURSDAY, FLASHERS!

This week I've been cooking...and cooking...and cooking! My husband always brings back goodies when he returns from our farm in Georgia, but this week he set a record! The fig trees he had planted finally bore their first fruit and he brought back about six pounds. That's a lot of figs, and would you believe I had never tasted a fresh fig? They are very sweet little bite size morsels which are delicious!...but six pounds! I couldn't keep them fresh for long, so I looked up fig recipes, and with Mom acting as my assistant, we made fig preserves (jam), stewed figs, fig syrup and fig and pecan muffins with a maple glaze.  Everything turned out fairly tasty, but after all that work, guess what we liked best, - the fresh fruit! All by itself! It's hard to improve on God's recipe!

     Howell also brought home peaches that I baked in cobblers  and gorgeous tomatoes where a single slice is large enough for a tomato and mayo sandwich... One of my favorite indulgences! But, one can only eat so many sandwiches. So... back to baking. I baked a couple of tomato and onion pies. There sort of like a quiche and they make an excellent side dish. You'll find the recipe in our Recipe of the Week post below. 

       Lastly, you won't believe what else Howell brought home: A contract for a small wood framed church that is on the National Historic Register. It's not a 'done deal' yet, but it looks like it might go through. I'll bet you're wondering what we're going to do with a church. Well, so am I! I knew life would NEVER be boring when I married this man 30 years ago! What an adventure! Stay tuned! Til then... make your own life's adventure! You can start by heading to the Farmers Market on Ocean Drive this weekend to stock up on our area's fresh bounty! Let me know what you create! You know I always enjoy hearing from you.     Avoid the credit card trap!  Just because a financial institution allows you to borrow a certain amount of money doesn't mean you should spend that amount.  Use revolving credit only in the most dire emergencies.  It is OK (and may even be good for credit) to charge if you pay the debt off monthly.   Average rates on new card offers jumped this week to the highest point in nearly three years (average 15.07%), according to the CreditCards.com Weekly Credit Card Rate Report.     RECIPE OF THE WEEK

    TOMATO & ONION PIE


      

     

    Ingredients

    • 8 Slices of Bacon
    • 1 Large Onion
    • 2 - 3 Tomatos
    • 3 Tablespoons flour
    • 2 eggs, beaten
    • 1 Cup Milk
    • 1/4 Cup grated Swiss Cheese
    •  1/4  Grated parmesan cheese
    • 1 Pie Crust
    • Preparation Instructions

    Fry bacon and saute onion in bacon drippings. Crumble bacon and mix with sautéed onion. Sprinkle flour over mixture. Beat eggs and add Milk. Stir in bacon and onion. Season with salt and pepper. Sprinkle cheese over bottom on pie shell.Cover with milk mixture Back at 350 for 1 hour. (You can add from fresh basil for some extra taste!)

    June 6, 2015 - September 6, 2015 The Museum's summer, 2015, exhibition, James Prosek: Ocean Fishes, will include a large selection of the artist's astounding paintings of salt water fish indigenous to Florida's waters. Prosek is known for his unusually vibrant, life size depictions that capture the beauty and vitality of our "finny friends." He prepared to paint Florida favorites such as the Snook, the Cobia and the Pompano, by making trips to the locations where these fish can be directly observed, including the Treasure Coast. "If I see my reflection in the eyeball of the fish or whatever, I'll paint that in," Prosek explains. "It's me and the fish. I've kind of described [the paintings] as self-portraits in a way."     June 6, 2015 - September 6, 2015 The Museum's summer, 2015, exhibition, James Prosek: Ocean Fishes, will include a large selection of the artist's astounding paintings of salt water fish indigenous to Florida's waters. Prosek is known for his unusually vibrant, life size depictions that capture the beauty and vitality of our "finny friends." He prepared to paint Florida favorites such as the Snook, the Cobia and the Pompano, by making trips to the locations where these fish can be directly observed, including the Treasure Coast. "If I see my reflection in the eyeball of the fish or whatever, I'll paint that in," Prosek explains. "It's me and the fish. I've kind of described [the paintings] as self-portraits in a way."
