HAPPY 'ALMOST' SEPTEMBER!
Yes, September 1st is next Tuesday, which means the Labor Day holiday is falling a little later this September and won't be here until Monday, September 7th. Next Wednesday, Sept. 3nd will be the 70th anniversary of V-J Day...the official date of our victory over Japan in World War II. It is certainly a day that changed the course of history. Another world altering event also took place in the month of September.
The Mayflower set sail from Plymouth England on September 16, 1620. The Pilgrims were headed to Virginia where they had an agreement to settle. The voyage took 66 days. They landed at Plymouth Rock on December 21, 1621 with 102 passengers on board. This included three pregnant women. One of whom gave birth just before landing. Can you imagine the courage it took to take off for a 66 day trip to the unknown under those circumstances? I love a trip...But, I just don't think I would have ventured on that one :)
And speaking of courageous people, there are non more courageous than our men and women in the military. Please take special notice of the post below to help establish a home in Vero for our disabled veterans. If each of our 7,302 subscribers contribute something, we could have that place furnished in no time at all. This is a fantastic opportunity for each of us to show our appreciation at whatever level we are capable of. Please help! Our veterans deserve at the very least that gesture of gratitude from us. :)

WHAT'S WRONG WITH WIKIPEDIA?
We all need to know this, but especially students who may be writing papers depending on research. Many schools will not allow Wikipedia and Harvard has a website warning about Wikipedia because it can be edited by anyone! Consequently it is not a good source for academic research. The example Harvard gives is pretty funny: Four years ago, a student who was writing a paper about the limitations of Wikipedia posted a fictional entry for himself, stating that he was the mayor of a small town in China. Today if you do a subject search on Wikipedia for mayors of towns in China, you will still find this fictional entry. To visit the Harvard website, Click here.

WIERD (BUT FUN) TIP FOR KNEE PAIN!
According to the REAL AGE website, a study at St. Louis University followed 34 seniors who had pain or stiffness in their knees or hips. Most of the participants were women, and their pain largely stemmed from osteoarthritis. The people were split into two groups: One group went to dance classes for 45 minutes one or two times a week for 12 weeks, while the other group didn't dance. The classes involved a type of slow, rhythmic dance therapy which was designed to help improve strength and flexibility.
At the end of the 12-week study, participants in the dancing group not only had less knee and hip pain, but they were able to walk faster as well. The dancers' use of pain medicine dropped by 39%, while people who didn't dance needed 21% more medicine.

RECIPE OF THE WEEK
PARMESAN CHEESE BASKETS
Impress your friends and family by serving petite salads in these easy to make edible 'bowls'. Salad idea: Finely chop spinach, strawberries and red onion. Add raspberry vinaigrette and top with candied pecans pieces.
Ingredient
8 oz. freshly grated parmesan cheese
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Place about 2 teaspoons of Parmesan cheese onto a silicone sheet or baking sheet lined with parchment paper, and gently spread the cheese out into a circle about 2 inches in diameter. Spread more circles of cheese onto the baking sheet, keeping them at least 1 inch apart.
- Bake in the preheated oven until golden brown, 4 to 5 minutes. Watch carefully to avoid burning. Remove from the oven, and let cool on the sheets until warm; while still warm, drape the wafers over a small bowl or other container. Let cool. Store at room temperature in an airtight container.
NOTE: These can also be served flat as 'crisps' with soups or to garnish salads.

Cindy is no stranger to VBCBA, having been involved as a member for various entities since she moved to Vero Beach in 2012. The Children's Home Society of Florida, Treasure Coast Division is the recipient of this month's Dyer Difference Award. The Children's Home Society, with a team of 1,900, serves over 12,000 annually throughout the Treasure Coast including 137 young adults through the Transitional Living Program. This program provides residential and outreach services, case management, life skills training and temporary, safe housing in order to promote independence and prevent homelessness among disadvantaged youth. The population targeted is young adults ages 18 to 23 who are homeless or at risk of being on the streets in Indian River, St. Lucie, martin and Okeechobee counties.

On Wednesday, August 19th members of the Vero Beach Art Club, Vero Beach City Council and Vero Beach Recreation Commission gathered at the Bethel Creek House for the new mural dedication. The Vero Beach Art Club painted the beautiful mural on the north wall of the Bethel Creek House during the summer. The mural is a scenic view of Jaycee Beach. A proclamation was read by Mayor Dick Winger and presented to the Vero Beach Art Club and Don Smith's Paint Store who donated all of the paint for the project.

Prosek is known for his unusually vibrant, life size depictions that capture the beauty and vitality of our "finny friends." He prepared to paint Florida favorites such as the Snook, the Cobia and the Pompano, by making trips to the locations where these fish can be directly observed, including the Treasure Coast. "If I see my reflection in the eyeball of the fish or whatever, I'll paint that in," Prosek explains. "It's me and the fish. I've kind of described [the paintings] as self-portraits in a way."
