Happy Thursday, FLASHERS!
Wow...this weekend will ring in the middle of December. Can that truly be possible?  Time got stuck in the HOV lane back in January and it has traveled there throughout the year. There are so many helpful and fun things I would love to share with our FLASHERS this month and so little time. That being said, we have made a gallant effort this week and have included: entertaining tips, gift ideas, holiday happenings, home-made present ideas, recipes and more! Our issue is jam-packed and my hope is that there is a little something for everyone! FLASHERS...The hustle and bustle has hit and 'holiday life' is in full swing. Swing...That reminds me of the Nutcracker in Swingtime that is playing at Riverside. Get your tickets now! There are also craft shows, bazaars, concerts and Santa is even coming to town on Saturday to have breakfast with the kids. Can you imagine the excitement the kids will feel as they 'dine' with Santa? Check the post below and get your tickets now for 'Breakfast With Santa.'

As we are all 'out and about' we must stay mindful that there are holiday scrooges out there planning and scheming to prey on 'Santa's Helpers'. Stay vigilant, FLASHERS and don't let your guard down. My sister unfortunately had her home broken into recently and we were told that robbery is 'The Crime of Vero'. Take the extra time to set your alarm if you have one, leave lights and TV on, you might even put sensor lights and/or observance cameras on your wish list. We all tend to be busier, more stressed and less careful as we work our way through the ever growing to-do list this time of year. It is that distraction that is the #1 gift we give to the holiday scrooge. Take a minute and glance over the five 'Holiday Theft Protection'  tips in this article and then move on to the  ten tips to help guard you against identity theft. Now you're good to go enjoy the season!

We never used to hear so much about fiber, did we? Now it seems it's mentioned on almost every package of food that we pick up. Why? -  It's because of the important role it plays in our digestive process, especially this time of year with all of the rich holiday foods to tempt us. FLASH TIP OF THE WEEK
FOOD STORAGE 
These tips from Reader's Digest for storing perishables may be especially helpful for the holidays:
HERBS -Fill an ice cube tray half full with chopped herbs and cover with olive oil or butter. Freeze for a day until solid then transfer to a ziplock bag and store for up to one month.
MUSHROOMS - Store in a paper bag in the fridge to absorb excess moisture to maintain crispness.
COOKIES - Put a slice of bread in an airtight container with the cookies to retain freshness.
PRODUCE -Wrap lettuce, celery, broccoli, and similar produce tightly in foil before storing in the fridge. They should stay crisp for up to four weeks. 
CHEESE - Spread a little butter on the cut end of cheese to keep it from drying out.

Cauliflower Chowder

 

The cauliflower is an amazing low-carb substitute, for potatoes and it's also a perfect way to sneak in some good ole' veggies for those picky eaters. Crumble some crisp bacon bits on top because bacon just makes everything so much better! This is a tasty, hearty soup that the whole family will gobble up...especially with our cold snap! 
 

INGREDIENTS

  • 4 slices bacon, crumbled
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup 2% milk
  • 1 head cauliflower, roughly chopped
  • 1 bay leaf
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves

INSTRUCTIONS

  • Cook bacon and set aside on a paper towel.
  • Melt butter in a large stockpot or Dutch oven over medium heat. Add garlic, onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in cauliflower and bay leaf. Cook, stirring occasionally, until tender, about 3-4 minutes.
  • Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth and milk, and cook, whisking constantly, until slightly thickened, about 3-4 minutes.
  • Bring to a boil; reduce heat and simmer until cauliflower are tender, about 12-15 minutes; season with salt and pepper, to taste. If the chowder is too thick, add more milk as needed until desired consistency is reached.
  • Serve immediately, garnished with bacon and parsley, if desired.
SCENE AROUND TOWN

Payton Brosche is a senior at Indian River Charter High School and in her fourth year in the Schumann School for the Visual and Performing Arts' photography program. Brosche received first place and a $12,000 scholarship to attend The Savannah College of Art and Design for her photograph titled "Freedom in the Heavens" at Congressman Bill Posey's Congressional Art Competition. This work is now on display in the Cannon Tunnel between the Capitol and the Cannon Building in Washington DC.

 

Brosche's photographs will be on exhibit from Monday, December 8th through Friday, December 19th in the 500 Student Gallery located on the IRCHS VAPA Campus. The student photographer's reception will take place on Friday, December 12th from 5 - 6 PM. Light drinks and refreshments will be served. All visitors must have photo ID and check in with the front VAPA office.

The planning committee for the IRC Healthy Start Coalition's popular annual Dancing with Vero's Star's has organized to plan what they consider to be the 7th and best year on record for the lively fundraising event. Dancing with Vero's Stars will take place on the evening of Saturday, May 9, 2015 at The Riverside Theatre, a community partner with the Healthy Start Coalition. It was a cloudy and breezy day on November 21st  when 112 golfers turned out at Bent Pine Golf Club to participate in 22nd annual charity gold tournament, "Golfin' for the Lagoon." The purpose: to raise funds to support the Environmental Learning Center's "Livin' for the Lagoon" educational campaign designed to encourage change in people's behaviors that impact the Indian River Lagoon. The event Co-chaired by ELC volunteer Susan Friesell and ELC board member David Morgan, grossed nearly $75,000, an increase of 40% over the previous year.

Dick Pippert is the newly elected Chairperson for The Arc

 

Dick served on the board of both SunUp ARC and Sun Up Center and is thrilled and full of pride at being a member of the Board and new chairperson of The Arc. He will oversee a terrific group of 14 board members and a dedicated group of advocates, advisory board and volunteers as they pursue their mission of meeting the needs of 180 individuals with developmental disabilities on two campuses.


 

Dick says "These are exciting times at The Arc, as we are getting ready to start construction on the first phase of our Residential Community, which will provide safe and secure housing for fifty four special needs adults in Indian River County."  The Arc is a Non-Profit, 501 (c) 3 agency, dedicated to meeting the needs of people with developmental disabilities in Indian River County. 

Mark your calendars and spread the word to all those who can benefit from the efforts of 'Operation Prom.' On March 28, 2015 teens in Indian River County will be able to choose prom dresses, tuxes, suits and accessories for that special evening at no cost to them from a large selection of attire. All the attire is in pristine condition and many of them are new.  A seamstress will be available to make the required alterations at no cost to the teens.

Every year the EL-DOEs distribute Thanksgiving baskets to a family from Sebastian Elementary School. The EL-DOEs membership donates money to purchase items for the baskets that contain: a pie, staples, vegetables, decorations, drinks and most importantly a turkey.

Indian River County philanthropists and companies were honored on November 18th in an awards presentation as part of National Philanthropy Day. LITTLE FREE LIBRARY

 

In its most basic form, a Little Free Library is a container of books for both adults and children from which anyone may pick up a book or two and bring back another book to share.
The Social Justice and the Religious Education committees of the Unitarian Universalist Fellowship of Vero Beach collaborated on this project.  Cy Rochon recently built the sturdy, bright red Little Free library box and it has been installed at the Harvest Food & Outreach branch on Old Dixie south of Oslo Road. Church m
embers of the congregation have pledged to donate novels and children's books to keep the library filled. 
The Little Free Library is an international mission is to promote literacy and the love of reading by building free book exchanges worldwide and to build a sense of community by sharing skills, creativity, and wisdom across generations.  You can read more about the program on their website:  http://littlefreelibrary.org/
