I know that most of you will be glad to hear that we are bringing back our 'Positive Person' feature in August! We know that this is always a favorite of our FLASHERS and we look forward to once again shining a 'FLASH-light' on those who devote so much of themselves to making a difference in the lives of others and to impacting our community in such a positive way. There truly is nothing like the heart of an individual who is willing to take time out of the busy day-to-day schedule to focus on others. In collaboration with the Navy Seal Museum and Veterans Council's Victory Center, this free community event offers area-residents the chance to thank the local men and women of the armed forces. During the event, guests will enjoy live entertainment and refreshments from Einstein's Brothers Bagels; see soldiers' equipment that was used in past wars provided by the Navy Seal Museum; a patriotic fashion show presented by Talbot's, special discounts for Veterans and a kid's craft corner. Additionally, Dr. James and Helen Shafer will dedicate a painting by artist, Josh T. Herman, titled "Lt Murphy and His Platoon" to the Navy Seal Museum located in Fort Pierce.

RECIPE OF THE WEEK
Salmon Burgers
Adapted From Food Network
- 1 1/4 pounds fresh salmon filet
- 2 tablespoons dijon mustard
- 1 tablespoon mayonnaise
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon lemon zest
- pinch of cayenne pepper
- 2 scallions, chopped
- 2 tablespoons panko crumbs, plus extra to coat patties
- salt & pepper to taste
- sandwich buns
- fresh arugula
Directions
- Pulse 1/4 pound salmon in a food processor with 2 tablespoons dijon mustard, 1 tablespoon fresh lemon juice, 1/2 teaspoon lemon zest and a pinch of cayenne pepper.
- Transfer this mixture to a medium bowl and mix with 1 pound of salmon that has been finely diced. You want it to be a little chunky so you can really taste the salmon. Add in 2 chopped scallions, 2 tablespoons of panko crumbs, and salt and pepper to taste.
- I used a cookie cutter about the same size as my bun and pressed the mixture into the cutter to create uniform sized patties. Pressing the mixture into the cutter also helps it keep its shape. Place on an oiled cookie sheet and chill for at least 30 minutes. You want the patties good and chilled so they will retain their shape. Heat canola oil in a cast iron skillet on medium-high. Cook the patties about 3-4 minutes on each side. You want them to cook through, but be careful they don't burn. Don't let the oil get too hot.
- Drain the patties on a paper towel.
- Toast buns, top pattie with dill sauce and fresh arugula.

Continuing its support of Indian River Habitat for Humanity, the SunTrust Foundation presented a check for $1,500 to the local Habitat affiliate on July 15. Representing SunTrust was Darlene M. Royce, Vice-President and Branch Manager, Indian River Office. Receiving the donation was Habitat CEO Andy Bowler, Development Director Peggy Gibbs and Grant Coordinator Robin Benjouali.

 Big Brothers Big Sisters of St. Lucie, Indian River and Okeechobee Counties is pleased to announce it has received a $40,000.00 grant from the Indian River Community Foundation to fund "Mentoring for Success in Early Childhood," a new program to improve kindergarten readiness for at risk children in Indian River County.

What a great community ~ No "Putts" about it!
Chuck Bradley, Executive Director of SunUp ARC, sent out a request for used putters for the Special Olympics golf program. Within days they received over 30 putters for the Special Olympic golfers!
