By now you have probably heard that Kate and William named the new little prince, George Alexander Louis. While we were waiting to learn the selected name for the new prince, it occurred to us here at FLASH that we weren't even certain of his last name. So, we decided to find out.  It seems that originally the royal family's official name was Saxe-Coburg-Gotha. This became a problem during World War I, when people began to mutter that it sounded far too German. King George V and his family needed a new, English-sounding name. After considering every possible name, from Plantagenet to Tudor-Stuart to simply England, the king and his advisors chose the name Windsor. To this day, the British royal family is known as the House of Windsor. However, when Princess Elizabeth married Philip of Greece, his family name was Mountbatten.  So, when she became Queen, she decreed that the last name for herself and her descendants would be Mountbatten-Windsor. So welcome to the world George Alexander Louis Mountbatten-Windsor! Wow! Are you thinking Kindergarten and learning to write your name?

  MINI LOBSTER SEASON ENDS TONIGHT AT MIDNIGHT
Years ago the State of Florida carved out a 48 hour period for recreational sportsmen to catch the spiny crustaceans prior to the beginning of the commercial season. This became known as 'mini lobster season' and it is always the last consecutive Wednesday and Thursday in July. That being the case....You have today to 'tickle' up a few of the delectable spiny creatures from hiding and into your nets. You will need a license. BUT WHILE IT'S HERE...BRUSH UP ON THE ETIQUETTE

Florida's rainy season begins in May and will last through October. No one can deny that we are in the middle of the rainy season! So, now is as good a time as any to remind our FLASHERS of umbrella etiquette. Did you know there was such a thing? Following certain courtesy rules will keep everyone happy and you might just find yourself... "Singing In The Rain!"   

  1. Carry an umbrella that's appropriate in size. You don't really want to be walking the sidewalk with an over sized golf umbrella. 
  2. Be considerate when you open your umbrella: Look both ways before you open it. Be mindful of anyone who may be standing nearby.
  3. Be considerate of other pedestrians walking beside you, as well as those approaching you from a different direction. The etiquette rule is that the taller person is the one who should adjust their umbrella height.   
  4. Never unfurl your umbrella indoors.   
  5. Keep it closed if you are standing under an awning or going through a covered area where there is little room to pass others.
  6. Close your dripping umbrella before entering a building or public transportation.
  7. Park your umbrella in a stand or place that is designated for umbrellas when inside.
  8. Carry your closed umbrella cautiously: When you are not using it, always hold it vertically, with the pointed end down. Don't tuck it horizontally with the ends sticking out ready to stab someone.
  9. Properly dispose of broken umbrellas-don't toss them angrily into the gutter. If your umbrella has blown inside out more than six times, replace it.  
  10. Be patient with your fellow pedestrians. Try not to get angry at others who may not know the rules of umbrella etiquette. Besides, a little rain never hurt anyone.

  RECIPE OF THE WEEK

LOBSTER SHEPHERD'S PIE 

FLASH personally believes that the best way to eat lobster is to boil it and serve with melted butter and lime.  However, if you were lucky enough to bring in your limit of lobster during the mini season, then you might want to try something different. How about....

Lobster Shepherd's Pies

(Martha Stewart) 

  

  

INGREDIENTS

  • 1 1/2 pounds Yukon Gold potatoes, peeled and cut into 2-inch chunks
  • Coarse salt and freshly ground pepper
  • 4 ounces (1 stick) unsalted butter, plus 1 tablespoon cut into 4 pats
  • 1/2 cup whole milk
  • 2 large egg yolks
  • 6 large leeks (about 2 1/2 pounds), white and pale-green parts only, halved lengthwise and cut into 1/2-inch pieces, rinsed well (6 1/2 cups)
  • 2 tablespoons all-purpose flour
  • , 1 cup stock; 3 cups meat, cut into large chunks Lobster Stock and Meat
  • 2 tablespoons coarsely chopped fresh dill, plus sprigs with dill seeds for garnish
 
DIRECTIONS:
  1. Step 1

    Preheat oven to 400 degrees. Cover potatoes with water by 2 inches in a medium stockpot. Add 1 tablespoon salt, and bring to a boil. Reduce heat; simmer, partially covered, until tender, about 20 minutes. Drain. Mash potatoes or pass through a ricer. Stir in 4 tablespoons butter, the milk, 1 teaspoon salt, and 1/4 teaspoon pepper. Stir in yolks.

  2. Step 2

    Melt 4 tablespoons butter in a large skillet over medium-high heat. Add leeks, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, for 2 minutes. Cover; reduce heat to medium-low. Cook, stirring occasionally, until tender, about 8 minutes.

  3. Step 3

    Stir in flour, and cook for 1 minute. Stir in stock, and bring to a boil. Reduce heat, and let simmer for 2 minutes. Stir in lobster and dill, and divide among four 10-ounce baking dishes. Top each with 3/4 cup potato mixture, leaving a 1/2-inch border, and a butter pat. Garnish with dill sprigs. Bake on a baking sheet until bubbling, about 30 minutes. Let stand for 15 minutes before serving.
