Dads you are a very special creation set to compliment and balance the mothers of the world ... together guiding, shaping, and sculpting tomorrow through the rearing of our children. There is no more important an occupation in the world. Below is a 'poem' given to my husband years ago. I enjoy its simplicity and sentiment and I hope you will too. May you all take a moment to thank your fathers this weekend for what they have instilled in you. There is no doubt that there are characteristics you possess solely because of the exact man your father is/was.

FATHER

Our researcher happened on this site by accident when she wanted to  be sure of the correct pronunciation of "poet laureate" ('et 'or 'ut'?). so she 'googled' it.  (I wonder when the dictionary will recognize 'google' as a verb?)  This site allows you to type in a word and then it speaks it for you.  It might be a good site for your kids to know about if they have to give a speech in school. COOKING WITH BEER FOR FATHER'S DAY

 

Martha Stewart suggests substituting beer in place of water or broth in your favorite dishes -- pot roast, for instance, or braised short ribs. It gives them a more complex depth and heartiness. It's also excellent for steaming clams or other seafood. Beer is also great when used in a batter for frying; besides adding malty flavor, its carbonation aerates the batter.   RECIPE OF THE WEEK

ROCKING OYSTERS ROCKEFELLER WITH BEER

From allrecipes.com 

   

1-1/2 cups beer

2 cloves garlic

seasoned salt to taste
7 black peppercorns
1/2 cup butter
1 onion, chopped
1 clove garlic crushed
1 (10 ounce pkg. frozen chopped spinach, thawed and drained
8 ounces Monterey Jack cheese, shredded
8 ounces fontina cheese, shredded
8 ounces mozzarella cheese, shredded
1/2 cup milk
2 teaspoons salt, or to taste
1 teaspoon ground black pepper
2 tablespoons fine bread crumbs
  1. Clean oysters, and place in a large stockpot. Pour in beer and enough water to cover oysters; add 2 cloves garlic, seasoned salt, and peppercorns. Bring to a boil. Remove from heat, drain, and cool.
  2. Once oysters are cooled, break off and discard the top shell. Arrange the oysters on a baking sheet. Preheat oven to 425 degrees F (220 degrees C.)
  3. Melt butter in a saucepan over medium heat. Cook onion and garlic in butter until soft. Reduce heat to low, and stir in spinach, Monterey Jack, fontina, and mozzarella. Cook until cheese melts, stirring frequently. Stir in the milk, and season with salt and pepper. Spoon sauce over each oyster, just filling the shell. Sprinkle with bread crumbs.
  4. Bake until golden and bubbly, approximately 8 to 10 minutes.

EXCHANGE CLUB ELECTS NANCY GOLLNICK
Exchange Club of Indian River member Nancy Gollnick was elected president-elect of Florida District Exchange Clubs at the District's Annual Convention in Cocoa Beach on June 1. As District President, she will be responsible for leading the Board of Directors in support of more than one thousand members in Florida's 28 Exchange Clubs in the 2014-2015 year. The seventh woman to lead the organization since it was founded in 1924, Gollnick is the first District president elected from the Indian River club since Bill Romani served in that position in 1979-1980. Two other Indian River County Exchangites, Diana Walker of Exchange Club of Vero Beach and Eric Menger of the Treasure Coast Club, have recently led the statewide organization.
 
The members of the Sebastian Elks lodge support many youth activities and various schools.  On Tuesday, June 7th, Jim O'Neill, the Exalted Ruler, on behalf of the lodge, presented a check in the amount of $250.00 to representatives of the Sebastian Charter Junior High school to help with their new library.
