It's back to tie-die, peace signs and Union Jack flags.  Main Street Vero Beach is hosting a British Rock Invasion featuring locally renowned band St. John's Wood that will take you on a "Magical Mystery Tour" and "Back to Where You Once Belonged!" Don't miss the fun on 14th Avenue. 

 

The event will include creative street merchants, food vendors, special entertainment during the band breaks, and more.  The event's declared Downtown Friday co-chairs Alan Dritenbas and Eric Hessler hope to see a big turnout.

Here are the design directions for these are great planter boxes you might want to find time to build. We had two larger boxes built a month ago and we are now enjoying fresh tomatoes, okra, herbs and cabbage. Our sunflowers are about to pop too and I love watching their heads chase the sun!

John Carroll High School's Anchor Club sponsor Rebecca Dempsey and student Amanda Ortiz, are congratulated as Amanda recently earned an internship at the Pilot International Convention and Anchor Leadership Summit this July in New Orleans!

The Willow School is excited to announce that it has won the Name the Whale Competition offered by Vatland Honda.  The whale has been the symbol for Vatland Honda since 1970 but never had a name. That all changed this past spring with the announcement of a contest for all Indian River County Schools. Students were invited to name the whale, color it and submit it to Vatland Honda. Tyler Sweet's submission won and the Vatland Honda whale now has a name, Wapi. Wapi is a Native American term for lucky.  David Vatland presented Govinda Reinhalter, Administrative Director of The Willow School, with a $10,000 check on Thursday, May 16 gave Tyler Sweet $2500 for his future education. When asked how he came up with the name Tyler said, "my mommy and I made a list of names and Wapi was the one I liked best." He then colored his whale by melting crayons on it. Wapi is a native American term for lucky.
 


 
The Sebastian Elks held their annual Memorial Day Picnic on May 27th at the lodge.   Over 250 members and guests honored the men and women who gave their all for our country with a moment of silence, the playing of "Taps" and Lee Greenwood's "God Bless The USA."  A very emotional time for all.
 
Thanks to Wayne Snow, chairman, (pictured in center) and his committee, fun, games, and good times were enjoyed by everyone including a big splash!
    A Perfect Recipe for Summer!
    LEMONADE LAYER CAKE
  • 1 1/3 cups granulated sugar
  • 6 tablespoons butter, softened
  • 1 tablespoon grated lemon rind
  • 3 tablespoons thawed lemonade concentrate
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 large egg whites
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/4 cups fat-free buttermilk
  • Cooking spray
  • FROSTING:
  • 2 tablespoons butter, softened $
  • 2 teaspoons grated lemon rind $
  • 2 teaspoons thawed lemonade concentrate
  • 1/2 teaspoon vanilla extract
  • 8 ounces 1/3-less-fat cream cheese
  • 3 1/2 cups powdered sugar
Preparation
  1. Preheat oven to 350�.
  2. To prepare cake, place first 5 ingredients in a large bowl; beat with a mixer at medium speed until well blended (about 5 minutes). Add eggs and egg whites, 1 at a time, beating well after each addition. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, salt, and baking soda; stir well with a whisk. Add flour mixture and buttermilk alternately to sugar mixture, beginning and ending with flour mixture; beat well after each addition.
  3. Pour batter into 2 (9-inch) round cake pans coated with cooking spray; sharply tap pans once on counter to remove air bubbles. Bake at 350� for 20 minutes or until wooden pick inserted in center comes out clean. Cool in pans 10 minutes on a wire rack; remove from pans. Cool completely on wire rack.
  4. To prepare frosting, place 2 tablespoons butter and the next 4 ingredients (2 tablespoons butter through cream cheese) in a large bowl; beat with a mixer at high speed until fluffy. Add powdered sugar, and beat at low speed just until blended (do not overbeat). Chill 1 hour.
  5. Place 1 cake layer on a plate; spread with 1/2 cup frosting. Top with remaining cake layer. Spread remaining frosting over top and sides of cake. Store cake loosely covered in the refrigerator.
