EASTER CENTERPIECE
This is an arrangement that will bring a touch of fun and whimsy to your Easter celebration. In the pictures to the left, two identical vases in different sizes are used. Most of us don't have this available. Feel free to use any smaller container that will fit inside a larger vase. The smaller container will be completely concealed by the jelly beans and peeps. The only thing is you might have to place some kind of filler behind your peeps to keep them pressed against the glass. You can layer different color jelly beans for a variation or use a bag of multi color beans. Plan the placement of the peeps so that they appear where you want them to. Finish off with a flower of your choice. Gerber daisies, regular daisies, tulips, lilies, any spring flower that will make you smile! |

"DANCING UNDER THE STARS"

Donates Money to the ELC
The Annual EcoFest Celebration at the Environmental Learning Center took place on March 3, 2013. Admission was free and participants enjoyed music, crafts, live animals and educational booths. Vero Beach Power Squadron cooked and served hot dogs and hamburgers and donated the proceeds to the ELC. Judy Peschio, Commander of the Vero Beach Power Squadron along with Ed Carr also from the Squadron presented a check to Holly Dill, Executive Director of the ELC. |

FOUNDATION FORUM
Representatives from private foundations gathered Tue., Mar. 19 at the newly launched Foundation Forum hosted by the Indian River Community Foundation. The session's topic, Children and Youth: The New Face of Homelessness, gave the representatives an opportunity to learn about this little talked about subject in Indian River County, the nonprofit organizations addressing the need and the opportunities private foundations have to impact the issue.
Four organizations including representatives from the Indian River County School
District, Children's Home Society, Hibiscus Children's Center and United For Families, served on a panel that provided the group with broad statistics about the subject of youth and homelessness in our community, along with specific information about how their organization is addressing the issues. The Forum concluded with dynamic discussion between panel and foundation representatives.

VETERANS ARE RECOGNIZED
The National Navy UDT-SEAL Museum, in Fort Pierce was the location of a special ceremony where at least a dozen combat wounded veterans from all branches of service received a hand carved cane with the warrior's name, rank and award information imprinted on to the cane. Over 200 were in attendance to watch the ceremony. The crowd erupted as one of the canes went to Rudy Warshawsky, whose story was told on the mini-series Band of Brothers. He is reportedly the last living veteran of that company. The Wood Carvers Association and the Navy SEALS plan to make this an annual ceremony. The Indian River Woodcarvers Association offer free classes and meet every Thursday at the Moose lodge in Vero Beach from 8:30 to 12:00.

Wheelchair Ramp Needed

SunUp ARC Chorus has been asked to be the opening act to kick off the weekend for the Relay For Life on the Beaches on Friday, May 3rd. (not to brag, but this makes it 5 years in a row!) Unfortunately, the stage that the city uses does not have a ramp to get the wheelchairs up on stage. In the past we have carried the individuals up and brought the chairs up. This year we have a couple that have the big electric chairs that we would not be able to lift up. A call was placed to the city regarding the stage. It is 24x40 and unfortunately they have no ramp available to use. I'm sending this out with the hope that someone either has a ramp we could use or knows of someone we can contact about getting one. If you know of someone or have any suggestions PLEASE LET ME KNOW by replying above.

RECIPE OF THE WEEK CRAB CAKE BENEDICT
Ingredients
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 3 tablespoons light mayonnaise
- 2 tablespoons Dijon mustard
- 3/4 teaspoon seafood seasoning
- 1/2 teaspoon Worcestershire sauce
- 2 egg whites, lightly beaten
- 1 pound crabmeat, drained, shell pieces removed
- 1 1/2 cups panko (Japanese bread crumbs), divided
- 2 tablespoons olive oil
- 4 eggs, pan fried
- 1 large tomato, sliced
Directions
- Combine first seven ingredients in a medium bowl. Gently fold in crabmeat and 3/4 cup panko crumbs. Cover and chill 30 minutes.
- Shape the crab mixture into 8 patties about 3/4-inch thick. In a shallow dish, roll patties in remaining 3/4 cup panko crumbs, coating evenly. In a nonstick skillet over medium heat, heat oil and cook 4 crab cakes at a time for 7 minutes until golden brown on each side.
Hollandaise Ingredients
- 3 eggs, yolks separated
- 1/4 teaspoon Dijon style mustard
- 1/2 lemon, juiced
- hot pepper sauce, to taste
- 1/2 cup unsalted butter, melted
- sea salt to taste
Directions- In a blender or food processor, add mustard, lemon juice, egg yolks and a few dashes of hot pepper sauce. Blend ingredients and slowly add the melted butter until the ingredients thicken. Taste hollandaise and adjust seasoning with salt and hot pepper sauce. Serve sauce immediately.
- To assemble Florida Blue Crab Cake Benedict, place one or two slices of tomato on each plate. Season the tomato lightly with salt and pepper.
- Place a pan fried egg over each tomato slice. Add a crab cake to the top of each pan fried egg. Evenly distribute the hollandaise sauce over the top of each crab cake and serve immediately.
