Dear FLASHERS,

As many of you have probably figured out...I have a real soft spot in my heart for our military! I am constantly amazed at the gift they so freely give us each and every day. The gift of their courage, unselfishness, strength and sacrifice. What am I asking from our FLASHERS in return....candy for Valentine care packages. Think about the balance here.  It seems grossly out-of-kilter. Let's show them some heartfelt, patriotic love! Take a look at the post below from 'The Military Moms Prayer Group.' They are asking that you drop off treats for our military by this Saturday. You can find drop-off locations below. Let's adopt the Nike slogan and ..JUST DO IT!  Oh, by the way, the 'brave heart' pins mentioned below are quite pretty and happen to make a wonderful Valentine gift. I gave several as extra Christmas gifts and all recipients LOVED THEM!  I will be purchasing a few more for Valentines. :)

JANUARY FISHING CALENDAR
(The darker the fish ~ The better the day for fishing)

WEEKEND PROJECT

 

You can easily make these hook racks over the weekend. There are a couple of ways to go about this. Either way...start with a  piece of wood cut to the desired size.  Remember, Home Depot will make cuts for you at no or very little expense if you purchase the wood there. You can either use fabric or scrap-booking paper for the decorative front. Cut to fit over top and sides of wood with a little extra to overlap onto the back. Brush on a couple of coats of varnish with the desired shine. I personally like the minwax varnish. Now you are ready to add whatever hooks you'd like. You can use smaller ones  (shown above) for jewelry or keys. Or you can use a larger hook that you affix to the front for clothing, scarves or a robe.

RECIPE OF THE WEEK

Chicken, Spinach And Cannellini Bean Quesadillas

1 1/2 -2 cups seasoned, cooked and diced chicken breast meat
1 TBSP olive oil
1 cup diced onion
1 cup diced red bell pepper
1 banana pepper, diced
a pinch of crushed red pepper flakes
salt and pepper
1 clove garlic, minced
1 (heaping) TBSP all purpose flour
3/4 cup chicken broth
4 cups fresh baby spinach, stems removed, coarsely chopped
1 (15.5 ounce) can of cannellini beans, drained and rinsed

Cooking spray
Flour tortillas
Shredded cheese (Monterey Jack, cheddar or a combination of the two works well here)
Avocados, diced
Fat free sour cream

In a large skillet heat olive oil over medium-high heat. Add onion, red bell pepper and banana peppers. Season with the crushed red pepper flakes and salt and pepper. Saute until veggies have softened, 6-8 minutes. Add the garlic and saute for another minute or two. Sprinkle the flour over the veggies and stir to combine. Cook while stirring for several minutes so that the flour loses its raw taste. Whisk in the chicken broth and stir until bubbly and smooth. Add the baby spinach and continue cooking for another minute or two or until spinach has wilted. Stir in the cooked chicken and cannellini beans and remove from heat.

Spray a large skillet or griddle with cooking spray. Heat over medium to medium-high heat. Place one tortilla on griddle and spread cheese over tortilla. Spread chicken, bean and spinach mixture over one half of the tortilla. Check underside of tortilla and when browned a bit, flip the half with just cheese over the half with the chicken. Remove from heat and cut into slices. Top with diced avocado and sour cream, if desired.

Our The CASTLE headquarters in Vero Beach provided the setting January 8 for the annual meeting of the Indian River Community Foundation during which the board of directors elected a new slate of officers to guide the organization. The new officers will lead the 15-member board of directors, which is also comprised of Ben Bailey, Drew Barton, Paul Becker, Kevin Given, Alma Lee Loy, Rick McDermott, Bob Morrison, Andrea Thurn and  Buzz Wurzer.

of the Dyer Difference Award: The Vero Beach National Little League. The Dyer
Difference award salutes a 501 C3 non-profit organization serving Indian River County that is truly making a difference in our community. Organized Little League Baseball serves children ages 4-12 and depends on support from local sponsors and city government. With city budget constraints the city was unable to help with lights and water, so costs for the league went up substantially. Tatiana and Will Dyer on behalf of Dyer Chevrolet, Mazda and Subaru presented the Dyer Difference Award along with a $3000.00 check to the league.

The United Way of Indian River County Board of Directors voted last week to immediately resume full funding of the Walk-In Center at the Mental Health Association (MHA). Due to the hiring of interim CEO Dr. Robert Brugnoli and the commit- ment of the new Board of Directors, the United Way is confident that the appropriate leaders are in place to help ensure the continuum of mental health care in our community is strong.
