GLUTEN FREE CHRISTMAS BALLS

 

1 cup dates

1 cup macadamia nuts

1 cup dried apricots

1 cup pecan nuts

2 Tablespoons grated lemon zest

Carob chips - optional

1 teaspoon allspice

1 teaspoon cinnamon

 

Pre-soak dates for about 15 minutes; drain off water. Pulse all ingredients together in food processor. The nuts and fruit should still be chunky and not blended into a smooth mixture. If the consistency is too dry, add a little water from the soaked dates. Roll into balls or cut into squares. Unsweetened coconut may be used to coat the balls or the squares.

 

May be stored in freezer and eaten directly from freezer.
