I trust this letter finds you in good health!  April was a busy month!  I was invited to speak at two functions and held many consultations.  And, there was the granola!  I was asked to address a group of tennis players at Woodlands Country Club, but sprained all three ligaments in my right foot during a tennis match. 
 
On April 16 I was honored to join three other speakers at a very special function titled "Your Ticket to Heaven and Health."  It was one of the most special events I have attended in a very long time.  There were 300 in attendance and two speakers shared how God had healed their deep emotional wounds and blessed them with physical healing.  The final speaker spoke of God's message of love and forgiveness. The Lord's presence was so evident!  The response was amazing and I look forward to walking a road with those whom I had the privilege of meeting.  
 
Granola update:  Since I last wrote, we have obtained the business license and the Department of Agriculture gave final approval on the labels.  We are now ready to choose our suppliers for the ingredients.  This is challenging, as I am doing my best to source ingredients that are not genetically modified and without pesticides, etc. . . . It's more challenging than what I thought.  Please continue to pray for the granola; it is a slow and cumbersome process, but we are making progress.  

This month I thought we could look at the thyroid - in particular, Hypothyroidism (underactive thyroid).  According to statistics by the American Association of Clinical Endocrinologists (AACE) and other medical organizations, approximately 27 million Americans are experiencing a thyroid disorder.  Thyroid disease is the most common endocrine disorder (a problem affecting the hormone gland) in the USA.  Women are five times more likely to develop hypothyroidism than men.
The Thyroid Gland
 
The thyroid is a small butterfly gland situated in the middle of the neck. It influences the heart, liver, brain, kidneys and skin. The pituitary gland produces a thyroid-stimulating hormone (TSH) which tell the thyroid to release the hormones thyroxin (T4) and Triiodithyronine (T3).

The thyroid regulates the body's metabolism and helps regulate our weight as well. The thyroid is also our body's internal thermostat, regulating our temperature (as well as hot flashes) and helps the body burn calories and metabolize fat.
Hypothyroidism
 
Hypothyroidism is a more common ailment and is often the cause of tiredness and a sluggish system. This is when the thyroid produces too little thyroxin. A sluggish thyroid may cause osteoporosis. Other common symptoms include: dry skin, lack of perspiration, overweight, hair loss, slow pulse, low blood pressure, muscle weakness, depression, poor memory, lack of libido, irregular periods, brittle nails, a puffy face, and cold extremeties.
Friendly Foods  
  • Kelp (iodine) and swiss chard and green foods (green barley juice powder)
  • Sesame seeds/tahini
  • Artichokes
  • Raw organic nuts (almonds) and seeds are also rich in iodine
  • Egg yolk
  • Essential Fatty Acids (EFAs) found in wild Alaskan salmon, chia, flax, hemp seeds, nuts and seeds, avocado pears, olives in brine/water, cold-pressed olive oil and avocado oil
  • Cold-pressed coconut oil-a saturated fat made up primarily of medium chain fatty acids.Also known as medium-chain triglycerides (MCTs), medium-chain fatty acids are known to increase metabolism and promote weight loss. Coconut oil can also raise basal body temperatures while increasing metabolism. Excellent news for people who suffer with low thyroid function. 
  • Lecithin granules-a complex mixture of phospholipids, phosphoric acid, two B Vitamins (choline and inositol) and amino acid methionine. Daily lecithin consumption can convert body fat to energy more quickly and help existing fat deposits to slowly disperse. (Look for more amazing information on lecithin in our May newsletter).

Quinoa, Butternut and Mixed Ground Nut Salad
 
Quinoa (keen-wah) is truly a super food. It contains a full amino acid profile, making it fantastic for brain development and concentration.  Quinoa, the humble grain eaten by ancient Inca people. It almost resembles couscous but is gluten-free and has more calcium than milk and is an amazing source of phosphorus, B vitamins, iron and vitamin E.  It can be found in health food stores or the pasta isle in Publix.
 
8 oz. quinoa
2 cups vegetable stock
13.5 oz. butternut
¼  cup virgin coconut oil (melted)
Sea salt
1 teaspoon fresh sage
5 oz. mixed lettuce
2 oz. organic goats milk feta (optional)
 
For ground mix:
1 oz. cashews
1 oz. almonds
1 oz. pumpkin seeds
½ teaspoon sea salt
 
Method for salad
1.       Preheat oven to 425 F.
2.       Simmer quinoa in the vegetable stock for 15 minutes or until soft.
3.       Cube the butternut; ensure pieces are all the same size. Add to a mixing bowl and coat with coconut oil, salt and sage. Add to the baking tray and bake until golden brown but still firm. (Don't cover the butternut.) Once butternut is ready, allow to cool.
4.       Mix the butternut and quinoa together. Add to a bed of lettuce. Crumble over the feta cheese and add the ground nut mix.
 
Method for ground nut mix
Mix all the nuts together with the sea salt. Add to your blender and roughly grind them up. Sprinkle onto the salad.

Spiritual Health
 
During this time of year when the school year is about to end here in the USA, it is a busy time for many of us.  I know in my own life I feel overwhelmed by everything that needs to be done.  God has been challenging me these past few days.  I need to keep my eyes on Him as my only source of provision.
 
Who is your source of strength? Is it your children, your business/career, your husband, your wife, your pension fund?  In my own life, I realize that Jesus Christ alone is my source. Nothing should ever stop the source from flowing.  No sickness, no unemployment, He is the fountain of Life.  Let's seek Him with all our hearts!

Glory Story
For the 4th month in a row an anonymous person has been sending me money in an envelope.  Inside is a piece of paper bearing the words, "God Bless."  We serve an awesome Father!  I stand in awe of His goodness.  Is this seed I wonder?
