Sun, Fun & Swim!
Yes, it's still summer time, and swimming and hiking are my favorite activities right now, which is why I LOVE lake Del Valle.
If you make a right at the entrance and park all the way north, by the boat marina (East side), you can bypass all the crowds. Hike 5-15 minutes to your own secluded spot on the lake where you can swim, hike and hang hammocks!
The rest of the lake you need to stay in a confined swim area -BORING.
It's only $6.00 per car and $2.00 additional for each dog.
Bring sun screen, food, water and something to float on!

How to Compete...at ANYTHING

Pure competition, finally.
So here is what I have learned from these Olympics that have helped sharpen my focus like a laser and work even harder at achieving my dreams.
That's the key word...DREAMS. It's what is missing in most people's day to day life.
For the most part, every Olympic athlete has a dream of being up on the podium with that gold medal around their neck.
They want it so bad they can feel it and it is always in the back of their mind, motivating them and driving them to do things normal people wouldn't even think about doing.
The gift that this dream gives athletes is a very, very specific goal to focus on achieving.
The problem with many people is not that they don't work hard or have goals, but it's that their goals are not very specific and most importantly, do not inspire them deep down.
If you want the the ability to compete with the best and overcome any obstacle with sheer determination and passion, then you need a dream that inspires you.

Weekly Food Staples
It's a Fact: Life is hectic these days. Moms and dads are working, kids are going back to school, the myriad activities throughout the entire household and the list goes on and on.
So how does one stay successful with eating healthy and ensuring that breakfast, lunch or dinner doesn't mean a trip to the closest fast food restaurant? One suggestion is to keep food staples well stocked in your fridge.
Start with making a list of your top ten fave food items (including snacks) and prepare them twice a week: Sunday and Wednesday. Here's a list of our top ten food staples (in no particular order). Click on each food item and it will take you to the recipe!:

RECIPE OF THE MONTH
Chicken Chile Verde Tacos
My first try at a chile verde dish, so I chose tacos. I was lucky enough to have a client bring me back green chiles from New Mexico (www.nmdist.com), although I'm sure there are many types that would work well here.

We also used fresh zucchini from a clients garden (YUM!) as a side dish.
- 1 whole chicken, boiled or cooked in crock pot to retain broth
- 1/2 onion finely chopped
- 3-5 T chopped cilantro
- At least 3 T cumin
- 1 jalepeno or serrano pepper finely chopped
- 1-2 large garlic cloves
- Juice from 1 lemon
- 3 cups chicken broth
- 30 ounces fresh green chiles (roasted, peeled and chopped, New Mexico style)
Step 1
Cook whole chicken, then cool, remove meat, and shred meat
Step 2
Saute 1/2 onion in 2-3 T olive oil
Step 3
Add garlic and serrano/jalepeno pepper and cook for 30 sec
Step 4
Add green chiles and chicken broth, bring to a boil
Step 5
Add chicken, lemon juice and spices, stir, and cover for at least 60 minutes, stirring occasionally
Step 6
Prepare and cook tortillas, extra cilantro, tomatoes and lettuce during this time
