Summer Time!!!
Or close enough, which means it's time to start eating more raw fruits and veggies to boost our enzymes, digestion, immunity and more.
I myself have been guilty of eating plenty of veggies this winter and spring (did we even have these two seasons??) but hardly any raw ones. My digestion has been less than optimal, until I just recently realized my mistake and added raw veggies back in, daily. I already feel better!
The theory is that if we over-consume cooked food, our bodies need to work harder to produce more enzymes for digestion. Over time, this leads to numerous digestive issues, nutrient deficiency, accelerated aging, weight gain and more.
So, I challenge you to get at least two servings each of raw fruit and veggies everyday this summer. I would love to here how you benefit from this so please let me know!

Homemade Chocolate Chip Ice Cream!
- 1 c whole milk
- 3/4 c sugar
- pinch salt
- 2 cups heavy cream
- 1 T pure vanilla extract
- cacao nibs or chocolate pieces chopped up fine
In a medium bowl, mix together the milk, sugar and salt until sugar is dissolved. Stir in heavy cream and vanilla. Cover and refrigerate 1 to 2 hours or overnite.
Turn on your ice cream maker and pour in the mixture (refer to your machine's operating instructions). Let mix for about 20 minutes. Five minutes before the mixing is complete, add the chocolate pieces.
Serve on top of your warm apple pie and enjoy! It doesn't get more american than apple pie and homemade ice cream!

RECIPE OF THE MONTH
Apple Pie!
This Memorial Day weekend in honor of our great country, apple pie was prepared AND eaten, three days in a row, by friends and family. Believe me when I say that we would not have made this pie if it wasn't so easy. If you have guests coming over with only 30 minutes to spare, you can whip up this pie in a flash!
No Roll Crust:
- 1 1/2 c flour
- 1 tsp salt
- 1 T sugar
- 1/2 c butter (softened)
- 2 T milk
Mix flour, salt & sugar. Mix oil and milk. Pour over flour mixture. Mix with hands. Press into pie pan with fingers, making sure to line bottom and sides.
Pie Filling:
- 6 tart apples chopped into slices (granny smith's are perfecto)
- 2/3 c sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 T butter
Mix sugar, cinnamon, nutmeg & butter. Blend into apples and pour into crust.
Topping:
- 1/2 c butter
- 1/2 c brown sugar
- 1 c flour
Mix butter, sugar, flour and sprinkle over apples.
Bake at 375 degrees for 50 minutes.
