I hope you are winding down a bit and enjoying the important things in life, like family, food, fun, & NOTHINGNESS.

     If I learned one thing this year it was once again the power of doing nothing and how important it is to balance the intensity of this day and age.

     If we cannot turn our minds off and plug into nothingness, i.e. stop thinking about goals, what needs to be done, etc., then we cannot tap into the wisdom that lies beyond our own minds. It is here that we get insights, and can refresh our own outlook on life, as well as continue to grow to our potential.

     I will be starting the new year at the beach, absorbing its wisdom and power and recharging my Self so that I am ready for the Year of the Dragon in 2012 ~ I hope you are doing something similar and I look forward to seeing you next year!

RECIPE OF THE MONTH

 

Vegan Chili 
 
(or, if you prefer, add meat & change name to "Vegan Killer") 

 Vegan Chili
  
Ingredients
  • 6 cups cooked black beans (or kidney, pinto) 
  • 1 medium yellow onion chopped
  • 4 tsp garlic minced
  • 28 oz stewed tomatoes (or easy alternative, we just buy fresh tomatoes and chop in blender) 
  • 1 cup celery chopped 
  • 1 cup green bell pepper chopped 
  • 3 T chili powder (or to taste)
  • 2 tsp cumin
  • 2 tsp thyme
  • 2 tsp oregano
  • 1 jalapeno with seeds (or omit if feeding kids that don't like spicy!)
  • salt and white pepper to taste
  • olive oil
  • dash of white sugar
  • 12 oz beer (optional) - we like Guinness (Click Here  for a list of vegan friendly beers)
Instructions 
  1. In large pot on medium, saute onions in olive oil until tender and translucent; add garlic.
  2. Add celery and bell peppers and saute for a couple of minutes. Add remaining ingredients into pot.
  3. Cook at a high simmer for several hours; allow liquids to reduce. 
This is a perfect recipe for your slow cooker. If your slow cooker cooks at a high temperature, you can throw everything together, even your pre-soaked, un-cooked beans.  
 
*We recommend using all fresh ingredients whenever possible! Just say "no" to canned food. :)
