How do you define "Natural"?
Do you know the difference between "natural" foods and "organic" foods? The word "natural" is everywhere around us...I see it on cereal boxes, granola bars, juice etc. Surveys conducted have shown that consumers pay more attention to the "100% natural" labels than the "100% organic" ones. And more consumers have stated that the "100% natural" claim is more desirable than "100% organic." It's not surprising then that food companies are using the absence of consumer knowledge to label their products as all natural and increase their prices.
What is surprising is that there are no restrictions on the term "natural." To a consumer, natural may mean no synthetic ingredients or chemicals; but this is quite the contrary. Natural in most cases equates to conventional.
Learning the difference between "natural" and "organic" can save you money and health problems down the road. When shopping for organic foods, be cognizant of the labeling. Purchasing food labeled "100% USDA organic" will ensure that you are getting your money's worth and a quality product.
Here's a breakdown of organic labeling:
- Products labeled "100% Organic" must only contain organically produced ingredients. These items meet the strictest standards of all available organic labels.
- Products labeled "Certified Organic" must contain at least 95 percent organic ingredients.
- The label "Made with Organic Ingredients" can contain anywhere between 70 to 95 percent organic ingredients.
Food products that are made using 70-95% organic ingredients, the remaining 5-30% are still conventional ingredients. By buying 100% organic, you are certain that your food is:
- does not contain preservatives or flavor enhancing chemicals
- does not contain traces of heavy metals
- encompasses organic in a holistic way
- crops are grown without synthetic pesticides, bio-engineered genes, petroleum-based fertilizers, or sewage sludge-based fertilizers
- livestock cannot be given growth hormones

Happy Halloween!
As you probably know I am not a sweets person, but if they handed out meatballs and mashed potatoes on this holiday, I would walk around with the biggest plate you ever saw!
As it is, Halloween, or Dia de los Muertos "Day of the Dead" is one of my favorite holidays when celebrated for what it truly is.
My Alter

For many countries it is a day or even a week for celebrating and remembering the important people in our life who have passed away. Tradition is to make an altar and set out memorabilia that remind us of those people who were important to us.
It is also tradition to cook something as an offering to them. I usually make my spaghetti sauce and put some champagne on the alter as an offering for my mom.
I display pictures of family, friends, dogs and anyone else who made an impact on my life.
This is a time to thank and remember them and celebrate their lives.

RECIPE OF THE MONTH
Creamy Scalloped Potatoes
A comfort food for sure. Potatoes and cheese cooked to perfection, what's not to like?
Ingredients
- 10 medium red potatoes, thinly sliced
- 1 small yellow onion, thinly sliced
- 2 cups grated cheddar cheese
- 1 T flour
- 1 cup milk
- 4 T butter chopped
- salt and pepper
Instructions
- Pre-heat oven to 350 degrees F.
- Layer half of the potatoes in a casserole dish.
- Place the onion and half of the butter on top of the potatoes.
- Sprinkle all of the flour on top of the layer and then follow with one cup of cheese.
- Season the layer with a little bit of salt and pepper.
- Repeat the steps with the remaining ingredients.
- Pour in the milk over the layers.
- Bake covered with foil for 1/2 hour. Remove the foil and cook for an additional 1/2 hour until potatoes are tender and the cheese is lightly brown and crisp.
