Refined vs. Unrefined Carbs
So here it is, the secret to health and disease, no matter who you are.
In studying different cultures around the world from way back when all the way to now, researchers have noticed one main theme; wherever refined carbohydrates are, disease is too.
In short, there are tribes and cultures who eat mainly meat and butter while remaining free from disease and obesity. There are also cultures and tribes that eat mainly starches and vegetarian type foods while staying healthy and free from diseases.
You know what both populations have in common? NO REFINED CARBS. Just natural foods. Every culture that has introduced refined carbs has also introduced diabetes, obesity and heart disease to name a few problems.
In many ways this is good news because this makes it simple! Just eat natural foods. It doesn't matter if it's meat, butter, potatoes,tomatoes or apples, as long as it's not cake and bread.
Once you alter these sugars as we do in refined carbs, you take out important ingredients such as fiber which helps the body process the sugars. Not to mention that they increase our appetite, are highly addictive and make us eat more than we can burn; an act not seen in nature. Now you have a metabolic mess with these altered sugars that leaves the body full of problems.
Please do your best to get rid of as many refined carbs as possible and only splurge occasionally.

GREETINGS!
Another month, another fun trip for my family and me, this time on a ferry in the San Francisco Bay. As you can tell by the pictures, it was totally AWESOME. And, as a bonus I got the tickets half off from Travel Zoo and their specials. I highly recommend looking into them for great local deals.
This is what I've been up to!!
(Alcatraz above) - This ferry ride was two hours long and circled the bay, including under the Golden Gate Bridge! It also included one free drink and lots of decent appetizers, including all you can eat fruit trays, yum.

This was with the Red and White Fleet and was only $25 per person! SO worth it.

SUMMER CLEANSE
Metaphorically, summer is a time for blossoming and flourishing, focusing and following through, joy and the anticipation of success. Imagine planting seeds (goals) in spring, now you must water (which means focusing on goals and plans) and weed (remove or overcome obstacles) in order for your crop (goal) to come to fruition (in autumn).
This cleanse is all about staying focused on your goals, following through with what you've started, and having JOY and enthusiasm while doing it. The farmer or the chef will not create a great harvest or meal if their efforts are joyless. The work it takes to obtain your goals should stem from the joy that the goals will bring, very simple, but often forgotten. The reason Gramma's meals taste so yummy is because she cooks with love and joy.
Your goals and hard work are no different. The pursuit of goals with methodical and lifeless energy will bring about the "gifts" of emptiness. The pursuit of goals with joy and anticipation of success will bring a deep contentment with your efforts and encourage the pursuit of similar things naturally.
The summer cleanse is not a big cleanse compared to that of spring, because it is a continuation of what you have already started instead of a completely new journey.

ARE YOU SURE YOU'RE HEALTHY?
I have an assignment for you. I have been doing extensive research lately regarding metabolism and diseases, and finding out that many of us are not as healthy as we think we are (including me) and that the long term effects of certain metabolic health issues are likely the cause of most cancers and diseases.
Research shows that most diseases stem from metabolic issues, and that many of us "healthy" people have some of the worst metabolisms, and therefore worst health, due to the destructive results of long term, intense or endurance-based activities and fitness.
Do I have your attention now? Trust me, it got mine, quick. I will make this brief because I will be coming back next month with a ton of info for you on the subject. But until then, if you are up for some detective work on your own health, you should do 3 things;
1. Check your temperature and pulse in the morning as soon as you wake up. Do this for 3-5 days and take an average. Your temperature should be 98.0-98.6 degrees and your pulse should be 70-85 beats per minute. Yes, I'm sure you think athletes should have lower pulse rates because they have a more efficient heart, but I regret to tell you that is not the case. That low pulse usually is associated with low body temperature and low thyroid function. Don't worry, I will tell you much more next month.

RECIPE OF THE MONTH
Raw Coconut Carrot Salad
Healthy. Easy to prepare. 4 ingredients. Need I say more?
Ingredients: - 3 carrots
- 2 T rice or white vinegar
- 2 T coconut oil
- 1/4 tsp salt or to taste
Directions:  1. Grate the carrots. 
2. Add the Vinegar to the carrots. 
3. Melt the coconut oil over low heat on stovetop and add to bowl. 
4. Add salt. Mix well. Can be consumed immediately or stored in the refrigerator for several days . Don't be alarmed when the coconut oil crystallizes; this occurs when the temperature of the oil begins to cool below 76 degrees. If you prefer a smoother texture, reheat the salad on low heat and enjoy right away. This salad is great for keeping you regular, getting a healthy dose of fat and fiber, and boosting your immunity.
