Saffron Rice 

 

How to add a little pizzazz to your plain white rice:

 

Add right into the rice cooker, Basmati rice, water, about a tablespoon of olive oil, two cloves of minced garlic and a smidgen of saffron. Mix it up a little and cook as normal.

Happy New Year!
 
bio pic 2Alright, it's about time to get back to a routine that supports our health a little more than the holidays did. At least I know that is true for me right now.
I'm not talking about cleansing or anything crazy like that (that's in Spring =), I'm talking about;

1. Figuring out what you want this year
2. Creating a plan to make it happen
3. Surrounding yourself with people who can help make it happen, including me

I have a knack for writing goals and creating action plans to get them, so if you would like any help with yours, I am at your service and happy to answer any questions via email anytime.

In case you are curious, here are some of mine.

What I want this year:
1. The ability to pause time (so I can take naps whenever I want)
2. To finish writing 2 books and get them to a publisher
3. To get 2 more websites (besides GotFunction) up and running full of free videos on Yoga for low back pain and Low Back Pain Self Treatment.
4. To be the best lover, father, son, brother, uncle, friend, healer and mentor I can possibly be

And yes, I have a plan for all of the above.

Brand New South Bay Running Group!

I am happy to announce the start of a new running group in Campbell.  Meet at the Rockbottom Brewery every Tuesday evening at 6:30pm.
 
Tim Scenone from Running Revolution is coaching the group along with sponsorships from Rockbottom Brewery and Adidas.

Adidas apparel was given out the first night for free and appetizers and beer from the brewery are complimentary each Tuesday after the run. You don't want to miss it if you are nearby!

There will be free t-shirts soon once the group is established in size and we know how many people will be consistent. I will be doing the warm-up/core workouts about once a month for the group.

The run last week was 3 miles and very social. This group is not for racing, it is SOCIAL and a great way to meet like-minded people.
As a bonus, Tim the coach is the best coach I know and more than willing to help you plan your mileage and strategies for races and events.

I hope to see you there!
Free Essential Oil Workshop

 

Our last workshop was a hit! It was a cross between physiology 101 and how disease enters your body at the cellular level. And as a bonus, how essential oils can help you get or stay healthy.
 
THIS IS NOT A SALES PITCH OR ME TRYING TO SELL YOU ANYTHING.
 
This is purely educational and I am very blessed to have Dale Billeter offering his services to do the workshop. He is a former college anatomy and physiology teacher with great experience in the health and essential oils field, plus his passion for health is contagious and he is FULL of amazing stories.

Belgian Waffles

I think many of us have experienced the crazy mornings of running around getting ready for work, getting the kids ready for school, making sure everyone has their lunches in hand and coats and keys. So amidst all of this madness, who has time to make breakfast, much less a HOMEMADE breakfast?

 

Well, problem solved! These only take about an hour to prepare and cook; once they're cool, throw them in a freezer bag or container and just pop them in the toaster for breakfast.

 

Yes, it's easier to buy the boxed variety and pop into the toaster with zero effort, but these waffles are made with ingredients that you can pronounce. J

 

Ingredients:

 

·         2 cups flour (sifted)

·         2 tsp baking powder

·         ½ tsp salt

·         4 large eggs, separated

·         2 T sugar

·         ½ tsp vanilla extract

·         4 T unsalted butter, melted

·         2 cups milk (or substitute with almond milk)

·         Non-stick cooking spray

 

Directions:

 

1.      Preheat the waffle iron according to the manufacturer's instructions.

2.      In a medium bowl, sift together flour, baking powder and salt. Set aside.

3.      In a second bowl, beat together the egg yolks and sugar. Add the vanilla extract, melted butter and milk and whisk to combine.

4.      Pour the egg mixture into the flour mixture and whisk until just blended. Do not overmix.

5.      In third bowl, beat the egg whites with an electric mixer until soft peak forms, about one minute.

6.      Using a rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix!

7.      Spray the waffle iron with the non-stick cooking spray and pour enough batter to just cover the waffle grid.

8.      Close and cook as per manufacturer's instructions until golden brown, about 2 -3 minutes.
