Meat Bombs 

Meat Bombs 

 

This isn't your typical meatball; hence the name: Meat BOMB. 

 

First, spice up your ground beef with your favorite seasonings. Brown until crispy some bacon slices (we prefer turkey). Place a dollop of goat cheese or any cheese in your fridge that melts well on the turkey bacon and roll. Then form your meatball around the turkey bacon. Cook the meatballs.

Lastly, wrap each of the meatballs with about four small sheets of filo dough. Brush melted butter over each and bake at 350 degrees for 10 minutes or until the filo is golden brown and crispy.

 

That'sa Meat-ah-Bomb-ah!

Now you know why these are worthy of its name!

I'm sure most of you have met Miles, my puppy, by now. If you haven't, well then you are long overdue for a tune-up from me because he has been at my center everyday for the last 7 months! And if he could talk, this is what he would say:
"Thank you everybody for making my life the most exciting and fun event around! I can't wait to greet you the next time you open the front door at Exercise Progression =)" !
Recipe of the Month

Rumballs  

Tis the season for homemade treats so bring on the rum balls! There's no baking with these tasty treats so you have more time to spend with family and friends. Now that's my kind of recipe! (We try using all organic products.)


  • 11 oz vanilla animal cookies (we use Barbara's Bakery which can be found in the health food section at Raley's)
  • 1 cup powdered sugar
  • 2 T unsweetened cocoa powder
  • 1 cup nuts (pecans, walnuts, etc.)
  • 1  1/2 T maple syrup
  • 2 1/2 oz rum (we use Captain Morgan's spiced rum but feel free to use whatever rum you have on hand, or you can even use a whiskey like Jack Daniels)

 

  1. In a saucepan on low heat, combine the syrup and rum; stir.
  2. In a blender, process the cookies and nuts until you get fine crumbs.
  3. Place the cookie and nut crumbs into a medium sized bowl and add the sugar and cocoa powder.  Mix well.
  4. Add the syrup and rum to the dry ingredients.
  5. Form one inch balls (mixture must be moist enough to hold together). If the mixture is too dry, you can add a few extra drops of rum.
  6. Roll the balls in powdered sugar and store in a tightly sealed container. 
  7. 
     You can serve these immediately or make them ahead of time and allow them to age (they will keep for 2-3 weeks). Place these in a cool area, away from sunlight or store in your fridge and allow them to come to room temperature before serving.
