Summer's Sizzlin' 
It is officially summer and time to have FUN! The weather is awesome and the energy is buzzing, which means activities, activities activities! My questions to you are;

I also love to eat healthy and have been studying nutrition for the last 15 years (yes I am that old) and have been consulting with some very well respected doctors and nutritionists on the subject. Over that time I have tried many different approaches and learned many great things. And now, I bring you a sneak peak to all my hard work. All my cleanses, attempts at being vegetarian, fasts, giving up alcohol, you name it, I probably have done it in the name of health and nutrition.

Recipe of the Month |
Healthy "Fried" Rice

This is a quick and easy recipe to make when you are short on time for dinner but you still want to make a homemade meal. If you don't have the veggies listed on hand, be creative and substitute what you do have in your fridge. Examples, chopped up spinach, finely chopped yellow onion, chopped zucchini or broccoli .
Ingredients:
· 4 cups of cooked long grain white rice
· 1 cup carrots, chopped into small pieces
· 2 stalks green onion, chopped
· 1 cup green peas
· 3 T Canola Oil
· 2-3 T Soy Sauce**
In a large skillet over medium high heat, add 2 T of canola oil. When oil is heated, add carrots and cook until slightly tender. Add peas and green onion and stir for a few minutes. Add the rice and mix with the veggies. Add the remaining canola oil and 2 T of soy sauce. Mix well and add more soy sauce if desired.
Make a fresh salad to complete your meal! Try this simple dressing to add some pizzazz to your romaine:
6 T rice vinegar
6 T Canola Oil
2 t Soy Sauce
1 t Honey
2 T Grated Onion
Mix all the ingredients other than oil in a bowl. Add oil in a slow stream into the bowl and whisk together well.
Makes 4 servings.
** Try San-J Organic Tamari Gluten Free Soy Sauce with reduced sodium. Can be found at Whole Foods.
Also, if you want a little extra flavor, chop up into small pieces one strip of turkey bacon. (You can cook this at the same time as the carrots. It will get crisp and infuse your veggies and rice with a little more flavor.) |
