Cowboy campfireLast year I was asked to write an article describing how to handle the aftereffects of too much partying.  It must have resonated with a lot of people because it found its way onto the Conde Nast website. 

The key is to remember that most of the damage we incur is due to dehydration.  Alcohol is one of the best dehydrators...remember, if you will, how they brought Lord Nelson back from the Battle of Trafalgar!

TRADITIONAL CHRISTMAS EVE
SANTA FE GREEN CHILE-CHICKEN STEW

Allergan logoThis is an easy recipe to assemble.  It's perfect on Christmas Eve with tamales.  Serves eight (or more if you eat a lot of tamales).

No, I am not turning into Martha Stewart, or even Rick Bayless.  This is one of those things that for us have always made Christmas in the Southwest.  I promise no more recipes until next year!

2 tbsp olive oil
1 large yellow onion, chopped
9 large cloves of garlic, finely chopped
1.5 pounds of chicken, skinless, cut into half-inch cubes
1 tsp dried New Mexican red chiles
1/2 cup of white wine
1/2 cup of water
1.5 tsp oregano, dried and crushed
2 tsp cumin
2 bay leaves
1 cup Anaheim (or New Mexican) chiles, roasted, peeled, seeded, and chopped
1/2 pound of tomatillos, roasted and pureed in blender with juice of 1.5 limes
1 chipotle chile in adobo sauce with seeds removed
28 oz white hominy with juice

Heat the oil in a large pan and saute the onion, garlic, chicken, and red chile powder until the chicken is lightly browned.  Add the oregano, cumin, and bay leave.  Add the wine and water and cook, covered, for 30 minutes.

Put the hominy with liquid in a large soup pot, add the green chiles, chipotle chile, and tomatillo/lime mixture.  Add the browned chicken and let simmer for an hour.  Remove the bay leaves.

Serve with sour cream, diced avocado, cilantro, lime, chopped onion, and enjoy.

This time of year the resort is often host to a variety of meetings, parties, etc.  As a result, parking is sometimes at a premium (including the spaces we have reserved for our patients).

Don't despair!  Merely drive over to the main entrance of the resort, valet your trusty carriage, and ask for a shuttle to the office.  We will validate your parking stub after your appointment, call a shuttle for you, and you'll be on your way. 

It's as easy as that.  Valet parking is also a good idea if it is raining.  You can exit under the porte cochere and stay dry.

THE NEW, NEW FACE REVISITED

why surgery is often not the answer

As we age we start losing volume in the upper face, our fat pads begin to Allergan logofall, and our lower face begins to sag.  We lose the fullness and the roundness that characterize the youthful face, what some authorities call "the youthful convexities." 
 
A facelift is good for tightening but it doesn't do anything for volume loss and deepening facial wrinkles such as the nasolabial folds.  You need a certain amount of that juvenile plumpness to stay looking young.  The best approach is to create a more youthful face by restoring the plumpness with wrinkle fillers.  The result is a face that should look like the face you had a few years ago.

So, have we solved the secret of happiness?

"I believe so," he said.

Ready.

"For what you have.  For the love you receive.  And for what God has given you."

He looked me in the eye.  Then he sighed deeply.
