Greetings!
 With Thanksgiving only a week away we thought it a perfect time to share something we have enjoyed through the years--our Cranberry Salsa. And since about now everyone starts thinking about that perfect gift for that special person, we thought it would be appropriate to let our loyal patients know about our great idea to reward you for your thoughtfulness. We wish you all a wonderful Thanksgiving Day surrounded by love and joy. On that day, as on every day, we will be thankful for our family, thankful for our animals, and especially thankful for the loyalty and kindness of our patients. CRANBERRY SALSA
from Doc (Martha Stewart) Foxx

Martha is only a guess...I don't really know where this came from but I've been making it for about 15 years. It is always a favorite on Thanksgiving and is an excellent addition to post-holiday turkey sandwiches.
Cranberry, Orange, Cilantro Salsa
1 fresh poblano chili
½ cup sugar
¼ cup orange juice
2 cups raw cranberries, coarsely chopped
¼ cup chopped toasted hazelnuts
2 tablespoons grated orange peel
1/3 cup chopped fresh cilantro
Char red bell pepper and fresh poblano chili over gas flame
until blackened. Enclose in paper bag
for 10 minutes to steam. Peel, seed, and
chop pepper and chili.
Mix sugar and orange juice in heavy, large saucepan over
medium heat until sugar dissolves.
Remove from heat and mix in chopped cranberries, transfer to large bowl,
and cool to room temperature. Mix
roasted pepper and chili, chopped hazelnuts, and grated orange peel into salsa.
Mix fresh cilantro into salsa.
Season with salt and pepper.

With her bad start and her come-from-dead-last race to victory in the  Breeders' Cup last weekend, ZENYATTA, the magnificent (and now legendary) five year old Thoroughbred mare managed to get our pulses pounding when she beat a field of talented all male horses. With 14 victories in 14 starts, she now stands alone as the all-time winning female racehorse in North America.
There are a lot of lessons to be learned from a horse and jockey who refused to quit in spite of overwhelming odds. The best quote, however, goes to Ayrton Senna (1960-1994), the great race car driver, who said: "With your mind power, your determination, your instinct, and the experience as well, you can fly very high."
