Kabocha Squash

Kabocha squash has a dark green skin and orange flesh. It has an exceptional naturally sweet flavor, and is similar in texture and flavor to pumpkin and sweet potato.

 

Use: It is a common ingredient in vegetable tempura and can be made into soup.

 

Storage: Store in a cool, dry place for up to a month or more. Cut pieces of squash may be kept in an airtight container in the refrigerator for up to 2 days.  

 

Simmered Sweet Kabocha 

 

Kabocha is commonly simmered in Japanese cooking.  This is a popular recipe in Japan.      

 

Ingredients
  • 1/2 kabocha (1 lb.), seeds remove
  • 1 cup water
  • 4 Tbsp sugar
  • 1 Tbsp soy sauce  
Directions

Cut kabocha into 1 ½ inch cubes. Peel kabocha. Combine
water, sugar, soy sauce, and kabocha in a medium pan. Bring to a boil, then reduce heat to low. Cover kabocha with aluminum foil and cover the pan with a lid. Simmer kabocha
for about 15 minutes, or until the liquid is almost gone.

Apple Pie Muffins

Ingredients:

Directions:
  1. Topping: In a small bowl toss together sugar, flour, butter and cinnamon until crumbly; set aside.
  2. Muffins: In a large bowl whisk together brown sugar, oil, egg and vanilla until smooth.
  3. In a separate bowl, sift together flour, soda and salt.
  4. Stir oil mixture into flour mixture alternately with buttermilk.
  5. Fold in apples, mixing just until combined.
  6. Spoon into greased muffin cups filling 3/4 full.
  7. Sprinkle topping over evenly.
  8. Bake at 350°F for 25-30 minutes or until golden brown and tops spring back.

Fall Fun on the Farm

Fall is such a great time of year in Minnesota.  We have perfect weather to get out and enjoy fall on the farm, and with the annual Education Minnesota (formerly known as MEA) conference coming up it's time to find something to do with the kids!  Here are few suggestions that the whole family can enjoy:  

  • #1 and probably most popular choice is the apple orchard.  Many orchards allow you to pick your or or purchase pre-picked apples in their store.  You will also find caramel apples, baked goods, pumpkins, hayrides and corn mazes at many Minnesota orchards.
  • Visit a local pumpkin patch to find the perfect pumpkin for carving or decoration this fall.
  • Up for a challenge?  Try your luck at navigating a corn maze at one of the 22 Minnesota farms with corn mazes.
  • Take a tour of a farm.  More than 60 Minnesota farms listed in our Directory offer farm tours.  Among the tour destinations are farms that raise buffalo or emus or grow hazelnuts.
  • Adults might enjoy taking a winery tour and sampling some Minnesota wine at a local winery.  If you have an open weekend, you may even want to try visiting a few wineries along one of five Minnesota wine trails!

Apple Pie Tips

These tips are courtesy of Minnesota Grown member, Carlson Orchard of Winsted, MN.     

 

  • Use a mix of Haralson and Honeycrisp  
  • Use shortening--not butter!
  • Use a little less sugar to bring out the real flavor of the apples

These tips work well for apple crisp too!

Making caramel apples this fall?  Use Haralson apples and make sure they are at room temp so the caramel sticks better!

turkeyWe know it seems early to start thinking about Thanksgiving, but if you're considering ordering a Minnesota turkey, you better get busy!  Many of our turkey producer sell out in advance so contact them now to reserve yours today.  Ordering your turkey now is just one less thing to do around the busy holiday.  Find a turkey producer near you!
Savory Buttercup Squash Soup with Sage

 

This recipe would also taste great with butternut squash, acorn squash, or pumpkin.  Be creative!

 

Ingredients:    

  • 1 small buttercup squash, about 2 pounds
  • 1 large sweet onion, coarsely chopped
  • 1 scant teaspoon salt
  • dash black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 ribs celery, chopped
  • 2 tablespoons chopped fresh sage
  • 4 cups chicken broth
  • salt and pepper, to taste
  • shredded Parmesan cheese, for garnish
Directions: 
  1. Heat oven to 375°. Peel the squash with a vegetable peeler, scoop out seeds, and cut into 1/2 to 1-inch dice.
  2. Toss the squash cubes with the chopped onion, 1 scant teaspoon of salt, a dash of pepper, and the 2 tablespoons of olive oil. Spread out in a large baking pan and bake for 30 minutes, until tender and lightly browned.
  3. Heat 1 tablespoon of butter and 1 tablespoon of oil in a medium saucepan over medium-low heat. Add celery and sage and cook, stirring, until celery is just tender. Add chicken broth and the roasted vegetables. Bring to a boil. Reduce heat to low, cover, and continue cooking for about 30 minutes, until vegetables are very tender. Taste and add salt and pepper. Carefully blend in small batches. Serve hot with a sprinkling of shredded Parmesan cheese.
