Apple Almond Tart
Ingredients: - 1 sheet frozen pie crust
- 1/2 cup almond paste (5 ounces)
- 1 large egg
- 1/4 cup all-purpose flour
- 1/4 cup sugar
- 5 cups apples, thinly sliced
- 2 tablespoons apricot preserves, heated
Directions: - Preheat oven to 425 F.
- Coat a baking sheet with non-stick spray.
- Press dough out into rectangle on baking sheet.
- Prick dough all over with fork to prevent bubbling.
- Bake until it begins to brown, about 10 minutes; remove from oven.
- Meanwhile, in food processor, combine almond paste, egg and sugar. Process until smooth, fold in 2 cups apples. Spread mixture over dough.
- Layer top with remaining sliced apples. Brush with apricot preserves; broil on high until apples begin to wilt, about 1 minute.
- Cut into squares and serve.

Chinese Broccoli

Haven't tried Chinese broccoli before? Now is your chance to pick some up at the local farmers' market and give it a shot. Here is a great recipe from Lynne Rossetto Kasper--it's delicious!
Chinese broccoli is sweet and mild and perfect for fast stir fries, but anything you can do with regular broccoli you can do with gai lan. The bonus is gai lan needs to peeling.
Store in the crisper of your refrigerator for 3 to 4 days.
Sweet-Spicy Chinese Broccoli (Gai Lan) with Chicken Bits
This recipe is slicked with hoisin sauce and a little kick of chile and ginger. The meat is merely flavoring and could be omitted.
Ingredients
- 8 ounces boneless chicken
thighs, cut into ¼-inch dice - ½ teaspoon sugar
- 2 teaspoons cornstarch
- 1 tablespoon soy sauce
- 2 tablespoons hoisin sauce
- 1 teaspoon sugar
- 2 tablespoons vinegar
- 3 tablespoons canola oil
- Salt and pepper to taste
- 1-1/2 inch piece ginger root, sliced paper thin
- 2 big garlic cloves, thin-sliced
- 2-4 small whole fresh Thai chiles
- 1 bunch (1 pound) Chinese broccoli (gai lan) cut into 1" pieces (if stems are thick, slice them in half lengthwise)
Directions
- In a bowl, toss together the chicken, ½ teaspoon sugar, cornstarchand soy sauce. Set aside. In a second bowl blend together the hoisin sauce,1 teaspoon of sugar, and the vinegar.
- Heat a 16-inch wok or a 12" sauté pan over high heat. Film it with oil, and drop in the ginger, garlic, and chiles. Stir-fry about 10 seconds.
Sprinkle lightly with salt and pepper. Add the gai lan to the pan. Stirfry 3 minutes or until starting to soften. Quickly turn it onto a plate. - Wipe out the pan with a thick wad of paper towels. Heat again over high heat, then film with oil. Add the chicken, sprinkle with salt and
pepper, and stir-fry until firm, about 4 minutes. - Add the gai lan back to the pan, and toss for 10 seconds. Add hoisin sauce, sugar, and vinegar, and toss another 30 seconds. Immediately
turn the stir fry onto a platter and serve hot. Rice or rice noodles are delicious here. Serves 2 to 4

Apple Season
Apple season is underway in our great state and for most growers the season is going to be a good one. Minnesota orchards are open for business and have early varieties available like Zestar! and Paula Red. By mid to late September the popular Honeycrisp will be available.
Since we had such a cool spring, most varieties will ripen about 7-10 days later than usual, so it's a good idea to call your local orchard in advance. Search the Minnesota Grown Directory to find your local orchard. In addition to apples, a lot of orchards also have pumpkin patches, hayrides, fall raspberries and other fun family activities. Plan your fall apple orchard visit soon!

Apples love cold temperatures and high humidity. You should store your apples in the crisper of your refrigerator in the plastic bag that they came in. To keep the apples moist, place a damp wash cloth or damp towel in the bag once a week.

Minnesota Grown at the State Fair
The Minnesota State Fair was another success for Minnesota Grown. We handed out a ton of Directories, and our volunteers had a blast! Thanks to all of you who came out to visit the Minnesota Grown Booth to pick up your Directory. Hope to see you again next year!

Raspberry Freezer Jam
Fall raspberries are in season right now, and seem to be a forgotten fruit in the fall. Pick some up soon so you can try this recipe! You can have this tasty jam all winter long!
Ingredients:
3 cups prepared fruit (buy about 6 cups fully ripe red raspberries)
5-1/4 cups sugar, measured into separate bowl
1 box SURE.JELL Fruit Pectin
Directions:
1. RINSE clean plastic containers and lids with boiling water. Dry thoroughly.
2. CRUSH raspberries thoroughly, one layer at a time. (Press half of pulp through a sieve to remove seeds, if desired.) Measure exactly 3 cups crushed raspberries into large bowl. Stir in sugar. Let stand 10 min., stirring occasionally.
3. MIX water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Continue boiling and stirring 1 min. Add to fruit mixture; stir 3 min.or until sugar is almost dissolved and no longer grainy. (A few sugar crystals may remain.)
4. FILL containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

September is Farm to School Month in Minnesota!
Governor Dayton has proclaimed September Farm to School Month in recognition of the many benefits that Farm to School brings to K-12 students and the local agricultural economy in Minnesota. Farm to School initiatives connect school children with locally grown food and the farmers who grow it. Farm to School also helps support children's health by increasing the use of fresh fruits and vegetables and other minimally processed local foods in school meals, and by providing educational opportunities for students. Participation in Farm to School has grown rapidly, from just ten districts in 2006 to 123 districts around the state in 2010, according to a survey conducted by IATP and the Minnesota School Nutrition Association (MSNA). In response, annual Farm to School celebrations have been expanded from one week last year to the full month of September 2011. Many schools will continue their Farm to School activities throughout the school year. For more information, see www.iatp.org . |

Apple Pockets
This apple pockets recipe is courtesy of Minnesota Grown Facebook friend Sara Wyse! She even has a fun blog with more recipes and step-by-step photos so you can't mess things up! Ingredients:
Dough - 2 C flour, divided
- 1/4 C wheat flour
- 2 1/4 tsp. quick rise yeast (1 pkg)
- 1 T sugar
- 1/4 tsp. salt
- 2/3 C water
- 1/4 C butter
Filling - 4 C tart apples (Haralson would be a great choice!), peeled and sliced
- 1/3 C sugar
- 2 T flour
- 1/2 tsp. cinnamon
Topping Directions: - Combine 1 C flour, yeast, salt, and sugar in a large bowl.
- Meanwhile, heat the butter and water to 120-130 degrees in a saucepan over medium heat.
- Add the melted butter mixture to the flour/yeast bowl, and stir until just moistened.
- Then, add in the wheat flour, and remaining white flour until a smooth dough emerges.
- Knead on a lightly floured surface for 5-6 minutes.
- Cover, and let rise for about 10 minutes. My dough ended up sitting about a half an hour, and that was just fine.
- While dough rises, cut apples and combine with sugar, flour and cinnamon.
- Cut the dough into 4 quarters.
- Roll each quarter into a rectangle.
- Cut dough into 4 rectangles.
- Place 1/4 C of the apple filling in the center of each rectangle.
- Pull the ends up over the filling, pinching in the center to seal.
- Place pockets on a greased cookie sheet (or 2).
- Set the cookie sheet in a warm spot in your kitchen, and allow the pockets to sit, covered for 30 minutes.
- When ready to bake, place the milk in a bowl and brush onto the pockets. You can either dissolve the sugar in the milk or you can sprinkle the sugar onto the pocket.
- Bake at 375 for 12-15 minutes until pockets are lightly browned.
