Maple Syrup   


Did you know????  
  • Maple syrup was first collected and used by the Native Americans and was later adopted by European settlers.  
  • It takes about 40 gallons of sap to make one gallon of maple syrup because sap is about 98% water.
  • Sap typically runs out of maple trees on days when the temperature is 40 degrees F following a night when the temperature dropped below freezing.
  • During food rationing in WWII, people in the Northeastern United States were encouraged to stretch their sugar rations by sweetening foods with maple syrup and maple sugar.  Recipe books were even printed to help employ this alternate source.  
Classes Without Quizzes

 

Hosted by the University of Minnesota, Classes Without Quizzes is a combination of mini seminars designed for the general public.  It's a great way to learn more about what the University is busy researching.  The event will be held on Saturday, April 2nd, 2011 from 8:00a.m.-1:30p.m. in McNeal Hall on the University of Minnesota St. Paul Campus.  Make sure to visit their website to register in advance!

You still have time to shop around for the perfect CSA that fits your family by visiting MinnesotaGrown.com!  The CSA model is also taken on by meat producers, poultry producers and fiber producers.  You can find a variety listed on our website.  Remember, many CSAs sell out early in the season, so make sure you sign up as soon as you find a CSA that is right for you!
 

Maple Pecan Shortbread Squares

Here is a sweet treat that you can bake up with real Minnesota maple syrup!  

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/2 cup softened butter
  • 1 egg
  • 1/3 cup packed brown sugar
  • 3 tablespoons pure maple syrup
  • 1/2 cup chopped pecans

Directions

  1. Preheat an oven to 350 degrees F.
  2. Combine the flour and 1/3 cup brown sugar in a mixer. Mix in the softened butter until a dough has formed. Press into an ungreased 8x8-inch baking dish, and prick with a fork.
  3. Bake the shortbread in the preheated oven until golden brown, about 20 minutes. While the shortbread is baking, beat the egg in a mixing bowl along with 1/3 cup brown sugar, maple syrup, and pecans. Pour the pecan mixture over the hot crust, and return to the oven. Continue baking until firm, 12 to 15 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking. Cool completely, then cut into 1-inch squares to serve.

Preserving Food Safely

This class teaches participants how to safely preserve a variety of foods by freezing, canning or drying. Whether you are new at preserving food or have been preserving for years, you will learn what's safe, what's not, the latest research and resources available. This workshop is offered in cooperation with the University of Minnesota Extension.

Maple Syrup Tip 


Want to bake with maple syrup?  For every 1 cup of sugar in your recipe, substitute 3/4 cup to 1 1/2 cups maple syrup and reduce the dominant liquid in the recipe by 2-4 tablespoons.

Maple Salmon 

Here is a yummy way to get fish in your diet.  Use your Minnesota made maple syrup in this recipe.  

Ingredients

  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon ground black pepper
  • 1 pound salmon

Directions

  1. In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
  2. Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
  3. Preheat oven to 400 degrees F (200 degrees C).
  4. Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.
