Chefs Tim & Mike have come up with another awesome menu to pair with beer guy David Garrett's autumnal selections. Here's the menu & beer list: 
 
biscuits & Border Springs Farm lamb sausage gravy 
 
roasted apple & walnut pancakes, house-made bacon & hash browns 
 
huevos rancheros with cilantro crema (add braised pork shoulder $2)

smoked paprika sausage, braised collard greens, potatoes & soft egg

"all the way" hash browns (hash browns, sauteed onions, Mahon cheese, diced ham, diced tomatoes, peppers, mushrooms and chili)

Ayinger Oktoberfest
This light, copper-colored Marzen beer has a deep malt flavor that finishes with a perfect balance of Bavarian hops. Brewed in Aying, just south of Munich. Served in a half liter stein!

Bayerischer Bahnhof Brettanomyces Lambicus
Back by popular demand! This amazingly sour Berliner wiesse style beer is fermented with the addition of wild yeast. The tart, sour flavors are backed by an extraordinarily light bodied ale with a refreshing finish.

Potter's Craft Farmhouse Dry Cider
This tiny cider maker, located in a building that used to house a horse vet clinic (still attached to a working horse farm!) puts out one fantastic cider. This cider, made of only Virginia apples, is quite dry with the most subtle, crisp and down right easy drinking apple flavor on the finish.

I'm so happy that it is finally autumn, the best season of the entire year! There's so much superb produce available at the italyheart farmers markets and it's finally cooled off enough to spend extended hours in the kitchen roasting squash and baking apples and trying out all kinds of new recipes.  I'm a fan of various food traditions, but the tremendously varied cuisine from Italy is probably my favorite.  With that in mind, I will be pouring samples of five superbly food-friendly wines from Italy this Friday.  Here's the lineup this week:

 

Orsolani 2011 Erbaluce di Caluso "Al Bacio": A specialty of the town of Caluso, located west of Turin in Italy's Piedmont region, the rare Erbaluce grape lies behind this zingy, crisp white wine. Impressions of tart peach and pear along with subtle floral hints and stony minerality come to mind when tasting this alpine delight!

 

Santa Barbara 2011 Verdicchio dei Castelli di Jesi:  Since long-before the Roman Era, the Marches region of central Italy has been a source of dry white wines made from the Verdicchio grape.  Dry and delicately fruity and herbal, this white wine pairs well with the local seafood-rich cuisine but also with lighter-pasta dishes.

 

Ca' Bea del Maniero 2011 Pinot Noir:  Produced in the Oltrepo Pavese district of Lombardy, south of Milan, this fruity-forward, supple Pinot Noir offers plenty of upfront cherry and ripe raspberry notes along with a hint of leather and earth.

 

Ca' Bona 2008 Colli Piacentini Gutturnio:  Made from a traditional mix of 60% Barbera and 40% Bonarda, this dry yet roundly-textured red wine from northern Emilia-Romagna has ripe cherry flavors along with hints of baking spices.

 

Villa da Filicaja 2009 Chianti Superiore:  Sangiovese along with a smidge of Canaiolo and Merlot grapes are used to make this savory, classic Tuscan red wine from an estate with more than 500 years of winemaking history!

Hello Cheese Punks,

It's been almost two days since the fantastic lamb dinner over at Secco and yet I still have sheep on the brain. Why? Because this week's cheese, La Peral has sheep CREAM added to the cow's milk and you know what that means! (Sheep=Fat=Flavor!)

Are you familiar with the "put a bird on it" phenom? Well let me suggest "putting some sheep in it" if you want to make
something super swoon worthy. Made in the village of Illas in Northern Spain, La Peral comes from an area (Asturias) known -8789-78-9 for its powerful blues, but this cheese won't hit you over the head, its potency comes from rich flavor and bright, olive fruitiness. The paste is ultra creamy, melts on the tongue and begs for some fig and nut accompaniment. However, if you want to send yourself and others into paroxysms of joy, you could make a pear and caramelized onion tart and crumble some of this magic on top. Do it! I bet it would pair well with sherry, but you'll have to ask Julia aka "the Sherry Pusher".

New in the case this week we have Appenzeller, Delice de Bourgogne and the Aged Gouda is back in stock!

Thanks to everyone who came out to our "On the Lamb" wine dinner Tuesday night with Craig Rogers of Border Springs Farm!  We learned a lot about being a shepherd and the special relationship small farms have with talented regional chefs--the dishes were sublime.

BEER of the WEEK

Stone Sublimely Self-Righteous

The guys at Stone Brewing, in San Diego, first brewed this as the Stone 11th Anniversary ale. Needless to say it was astoundingly popular. So they brewed another batch of it and re-named it Sublimely Self-Righteous. That batch probably lasted a couple months before it was gone and the whole country was screaming for more. So now it's a permanent year-round beer! Basically what you got here is a big 'ole, massively hopped, and super malty, black India pale ale. Come on by the shop, we'll have a bottle open for tasting.
