On Cheval Farm | |
Blueberry season at our farm marks the end of bottle feeding! YEAH! Our goat kids are bottle fed for about seven weeks after they nurse on their moms for about two weeks. It is a happy time but extra long days for us. We bottle feed about 40 babes three times a day so it is a bit exhausting. Our blueberries are just starting to come in and our blackberries will be done around the same time our delicious figs ripen. We use our berries for cheese making as well as our figs. We will however be offering a small to go pack of cheese, fresh figs & a disposable knife soon, for a limited time - great for boating & hiking. Eat well, be healthy.

Chef Joe and his Flank and Sirloin Crostinis

Chef Joe and Chef Mike from Roosters Kitchen, Charlotte, were grilling at the Market last Saturday.
Their impromptu menu delivered Grilled Open-face Crostini with Flank/Sirloin Steaks and Basil Aioli.
Thanks to these Market vendors for donating their goods to the chef demo. Please support them!
- Big Oak: sirloin steaks
- Gilcrest: flank steaks
- Big Jim: garlic
- Twin Oak: basil
- KC Farms: red onions
- The crostini bread came from King's Bakery.
The day featured a great demonstration on how to make aioli (mayonnaise) by Chef Mike, quite a skill to have; with just using egg yolks, neutral oil, garlic, kosher salt, water, lemon juice and adding chopped basil at the end.
See Chef Joe again at the 2nd Annual Market Chef Challenge in November! |

Sweet Corn and Summertime
by Elle Gurskis, Davidson College, 2013
Sitting on the back stoop, I carefully peeled back the papery green husks that protected each fat ear of corn. The kernels beneath were shiny and white, arranged in perfect military rows. I wondered if the soldiers were aware that they would soon be plunged into a boiling bath or tossed onto the flame-licked metal of the charcoal grill. But I snapped back into focus. I was five years old, just big enough to understand that my duties as appointed Corn Shucker were not to be taken lightly.
Summer after summer, I resumed my post on the stoop to help prepare for our family meals outside. With fireflies dancing in the air around us, we would sit under the big maple tree and devour sweet corn from the local farm, as well as lobsters fresh from the waters of Long Island's Atlantic coast. My godmother would supply crisp greens and luscious tomatoes from her garden. We would eat and share stories and laugh until bright stars popped into the sky.
And here I sit on that same back stoop, my skin drinking in the early summer sunshine. I can't wait to take up my seasonal job, shucking corn for more backyard family dinners. For me, warm weather means eating outside, surrounded by nature while savoring its bounty. I'm looking forward to another summer of delicious local food and even more delicious memories. |
