 It's a wonderful overlapping of Spring and early Summer produce.  Come early for Best Selection!

 

Saturday is Strawberry Shortcake Day. Sweeten up your weekend with fresh strawberries, homemade shortcake and whipped cream!  

 Our DFM volunteers will be preparing and selling scrumptious strawberry shortcakes from 9:30-11:30 a.m. ($3.00, while supplies last). The strawberries will come from our very own farmers, as well as the classic shortcake biscuits made by our DFM bakers. 

These are yummy and popular, so come early and be sure not to miss out!  

 

  

New and in abundance this week:  broccoli and asparagus at Houston Farm, Correll Farm and Big Jim's Produce, May cherries at Landis Gourmet Mushrooms and Twin Oak Farms and the first of the early peaches at Peaches & Cream, LLC

Try experimenting with your salad greens.  Many of the produce farms have swiss chard, bok choi, tat soi and other dark leafy greens.  Simply cut these greens into bite-size pieces and mix with your DFM lettuces.  It's a great use of greens and adds an extra punch of flavor and nutrients!

Eggs continue to be plentiful.  Adding mixed greens to your morning omelet or frittata gives it gusto!

Spring Paninis and Salads
(with a few surprises):

Last week under the market's chef demo tent, Chef Vera Samuels cooked a delicious rendition of panini, and prepared a strawberry & spring greens salad using what was available at the market, using these recipes:

Here is the Chef's shopping list from the market - note that there were substitutions based on what was available:  

  • Organic Tatsoi from The Inspired Garden (in place of spinach in the salad)
  • Swiss Chard from KC Farms (in place of spinach in the panini)
  • Smoked hog jowl from Wild Turkey Farm (in place of smoked bacon in the panini, see note below**)
  • Mozzarella and goat cheese from Calico Dairy
  • Greenhouse tomatoes from Twin Oak Farm
  • Strawberries from Peaches & Cream
  • Baguette from Chef Charles
  • Country style bread from Millstone Meadows
  • Fresh basil from Correll/Red Barn Farm 
**Note:  one of the challenges we face in the Piedmont region is an increasing demand for local smoked pork...bacon...and a decreasing supply of people and places that can do this for our pork producers without a lot of unnatural ingredients.   It takes time, 3 weeks or more, and a lot of driving for local producers to bring cured and smoked pork in the form of bacon, kielbasa, canadian bacon, and hams take a lot longer.  So next time you are able to score some local bacon at the market, thank the farmer and consider yourself lucky!   Oh, and get involved in the local food movement.
  
Besides teaching new techniques and having fun tasting delicious foods, the DFM cooking demonstrations educate about eating what's in season and available from local farms.  Stay tuned for the next one!
