A Grand Time at the Fall Market Lunch

Around 120 people lunched together after the market last week.  Farmers, volunteers, customers, hungry children...it was a real community gathering.

 

The food was great!  Wild Turkey Farm bratwurst, Gilcrest Natural Farm chicken, Big Oak Farm and Birdbrain Ostrich Ranch burgers, Loomis family sweet potato chili, delicious sides made from produce from local farms and the desserts were fabulous.  Chef Charles Catering supplied the grill and the chafing dishes.   Dawn Beltrami from Hippie Kitchen would not divulge her chocolate pecan pie recipe, but the pie was gone in minutes.   Barbee Farm peach ice cream was a favorite! 

 

Thanks to all who attended and volunteer for the event.  The Loomis family was there for the 3rd year in a row to to make the buffet run smoothly - Joan (a regular market volunteer), son Charles, a chef (on the grill) and daughter in law Pam who helped manage the flow and serve the food.   They make a great team!   Thanks to the excellent planning of events Chair Courtney Spear, everything went off without a hitch.

 

We've had many requests, as usual, for the Loomis Family Sweet Potato Chili. 

 

Here it is:

 

BLACK BEAN SWEET POTATO CHILI

 

Servings:  Makes 4 main course meals

 

INGREDIENTS

 

2          Tab. olive oil

2 l/2      Cups chopped onion

3          Garlic cloves, chopped

2 l/2      Cups sweet potato cut in 1/2 in pieces

2          Tab. dark chili powder

2          Tea. ground cumin

3          15 oz. cans black beans, rinsed & drained

2 1/2     Cups vegetable broth

1          14 1/2 oz. can fire roasted diced tomatoes

3          Cups (packed) chopped Swiss chard

 

Add salt, pepper, chopped parsley and lavender to taste.

 

 

PREPARATION:

 

Heat oil in heavy large pot over medium high heat.  Add onion and garlic, saute until clear and/or lightly browned.  Add the diced sweet potato, saute about 2 minutes then stir in chili powder and cumin.  Saute this mix a couple of minutes or until a golden brown.  Add beans, broth and, tomatoes with juices.  Bring to a boil.  Reduce heat and simmer uncovered, until sweet potato is tender about 20 minutes.  Stir in chopped chard, simmer until tender but still bright green--about 4 minutes.  Season to taste with the salt, pepper, chopped parsley and chopped lavender.

 

Note:  Even though heat is added via the dark chili powder more may be added as desired.  Also, the longer the chili simmers the better the taste.
