Fall recipes that pack a nutritional punch

Seasonal eating kiosk

Here are two Fall/Winter recipes compiled by Davidson students in Dr. Campbell's Writing for Community Class.  They created a kiosk for the market to help patrons get seasonal, healthy recipe ideas.   Come by and pick up a seasonal produce chart and some recipes!

Braised Kale with Pancetta

Beef Tenderloin with Risotto-like Potatoes

PLEASE NOTE  - On the back of each recipe is a nutrition chart like you're used to seeing on a box of packaged food.  CHECK OUT THE RDA's (recommended daily allowances for vitamins and minerals) FOR THESE RECIPES!  These recipes using healthy fresh foods are remarkably nutrient dense.

The students analyzed each recipe at www.nutritiondata.com  You can sign in and analyze your favorite recipes for nutritional content, or find new recipes at the site.

Thanks again to Dr. Shireen Campbell and last Spring's "Writing for community class for  a wonderful resource.

Do you have a Fall or Winter recipe, cooking tip or website link you think is great?  Share it with us at our DFM Facebook page!
