Photo by Patti McKinnon | Food miles- How far does food travel to get to the DFM? The food you buy at our market travels an average of less than a measely 23 miles to make it into your reusable bags. Over 80 percent of our vendors' farms lie within a 30 mile radius of our market. The sum of all the distances of all our 35 vendors turns out to be amazingly under 800 miles. Compare this to average distance one meal from your local grocery store travels, 1,500 miles. There is no comparison. Food miles are more important now than ever, especially with the recent oil spill. We cannot express how much we appreciate your continued support and participation with the DFM! Back to school - Local Food Lunches
by Jill Stierli With the start of school right around the corner, why not stay on track with your local food resolutions by packing your child's lunch and your lunch too? A lot of parents dread the night before or morning lunch packing, but with a little planning you can keep up with your nutritional resolutions of the summer. Take advantage of your farmers market while you can: The summer's bounty of fresh produce begins to wind down as the school year starts, so take advantage of all that it has to offer. Here are just a few lunch ideas using produce, meat, cheese and breads from our local farmers markets:· Bell pepper or cucumber sticks with herbed cheese spread or hummus. Or make it fun and stuff mini bell peppers with those items or your version of egg or tuna salad.· Tomato or cucumber sandwiches sprinkled with bits of crispy prosciutto or bacon.· Pasta salad with fresh herb pesto, summer squash, zucchini and crispy prosciutto.· Edamame (soybean), corn, tomatoes, and onion salad with fresh herbs - add chicken for extra protein. · Quinoa salad with tomatoes, cucumber and/or peppers. Mix with a simple vinaigrette made from fresh herbs, garlic, olive oil and balsamic vinegar.· Chips and salsa made with fresh tomatoes and peppers. Add in black beans or black-eyed peas for protein.· Instead of the usual veggie lunch staple of carrot and celery sticks, try green, red or yellow bell pepper strips, green beans, cucumber, zucchini or summer squash sticks.· Fresh seasonal fruit
Peaches are so sweet and juicy right now and apples are right around the corner. There's still a variety of melons at the market. If you have a melon scooper, make melon balls or use a cookie cutter to make fun shapes out of watermelon. Save timeBecause the week is filled with work, homework and after school activities, try to do as much lunch prep work as possible on Sundays. Some steps to take to save time during the week:· Cut up enough vegetables and melon to last a few days and store in an airtight container. This also helps when your kids are looking for a quick snack after school. · Save extra bacon from the weekend breakfast. This is a hard one as it is next to impossible to keep any bacon from being finished off at breakfast. Try to circumvent this problem before you serve breakfast by taking any "leftovers" that you would like to use during the week and crumble them into small pieces and stash away. This makes it a little harder to finish off any excess. You can do the same with crispy prosciutto. Not only can these bacon or prosciutto bits be used for sandwiches but they can also be used in salads or pasta dishes during the week.· Make extra pasta or quinoa. If you haven't sold your kids on quinoa yet, a good pasta shape for salads is orzo. It's very easy to mix with veggies and any leftover chicken. Make sure you get your kids involved in putting together a healthy, balanced lunch. If you miss a day or forget to pack lunches one day, don't beat yourself up about it. By helping to prepare their own lunch, your children will be better prepared to make healthy choices on the days that they do go through the cafeteria lunch line. |
