 Chef Kris Reid and Gilcrest Natural Farm Chicken
Chef Kris Reid demonstrated a technique for making sushi at home. Sushi refers to the rice, not to being raw. She made a spicy chicken salad from Gilcrest Natural Farm with fresh vegetables. The same technique could be used with a variety of fillings including grilled vegetables or seafood.
The technique is split into three parts:
Make the sushi rice. See recipe in picture above.
Make the filling: Chef Reid describes her technique here: Pound out de-boned chicken breast in a zip lock bag with a little chili powder, salt, pepper, cumin and grape seed oil. Put chicken on a hot grill and cook 4 minutes per side or until the internal temp reaches 160 degrees. Set chicken aside to cool. In a bowl mix, for every breast of chicken, 1 tbsp of mayo and a tsp of Sriracha Chili Sauce, a dash of pepper and salt. Chop chicken and add to mixture and combine.
Roll the Sushi: You will need to purchase a sushi mat from an Asian Market Wrap the mat with plastic wrap to keep the rice from sticking to the mat. Add a large fist full of prepared sushi rice to the mat. Using only one half of the mat and not going all the way to the sides, press rice down into an even thickness, and a uniform square. Again using only have the mat and not going all the way to the sides.
Place a small amount of chicken, basil and thinly sliced vegetables (cucumbers, peppers, squash) in the center of the sushi rice square you created on the mat.
Pick up one end of the mat and roll it over to that the two side of rice meet and the ingredients are firmly bedded inside. Press down gently on the roll. Continue to roll, pressing with each turn until you have created a "log". At this point you can cut and serve, or you can wrap into plastic wrap and place in the refrigerator. If you rice isn't very sticky and you are having trouble cutting it (often happens with rice that has too much moisture from cooking or from the humility in the air) you can wrap your "sushi log" in plastic and put it in the refrigerator to set up. Cut into 2 inch, or more, pieces. anything smaller will often fall apart on you or be difficult to handle.
Have fun- and if at first you don't succeed, maybe skydiving isn't for you. But if you try a few times to roll sushi, and you are patient you will likely be successful and enjoy making this dish with a variety of fillings in the future.
