Chef Demo Catch-up!

Did  you miss Saturday's cooking demo with Chef Kris Reid?  Do you want to try her recipes at home?

Here are the recipes for the stove-top frittata and summer salad Kris Reid prepared at the market this past Saturday:

Frittata
8 eggs
1 cup of chopped seasonal vegetables
1 tbsp local butter
1 tbsp grape seed oil
2 oz of Cackleberry Feta
salt and pepper to taste
Chopped basil for garnish

Chop vegetables and saute. Set aside. In the same nonstick pan, melt butter and add grape seed oil. While butter is melting and pan is warming over medium high heat, beat eggs. Add eggs to hot pan. Put a tight fitting lid on the pan to help egg cook. After a few minutes, use a heat resistant spatula to loosen the egg from the pan. Egg should still be wet on top at this point. Add sauteed vegetables to the top, in one quick flip, turn the egg to the other side to cook for 30 seconds. If you are uncomfortable "flipping" the fritatta, use two spatulas to carefully turn it. Once it's cooked, slide the frittata onto a plate, season with salt and pepper. Finish with crumbled feta and basil. Cut into wedges. This is great severed hot, room temp or cold. Also makes awesome picnic food;)

Summer Salad
1/4 cup red wine vinegar
2 tbsp olive oil or other quality salad oil
salt and pepper to taste
2 Cucumbers, skin removed and sliced
3 medium size tomatoes, 1 sliced, 1 diced, 1 rough chop
1 small red onion
2 cloves garlic
4 leaves of basil, chopped

Beat the first 4 ingredients in the bottom of a bowl you will serve the salad in. Add remaining ingredients, and stir with a large spoon until everything is coated with the dressing.  Serve immediately, or refrigerate to marinate for a few hours. Delicious served on it's own or on toasted bread.

DFM NEWS!

The Davidson Farmers Market recently received a grant from the Sunshine Lady Foundation!  This grant will support Davidson Farmers Market in its mission to educate the community about the value and pleasure of consuming fresh, local, and healthy produce through programs like the SNAP program, which lets consumers use their EBT cards to purchase fresh produce at the farmers market each weekend.

BUY ONE, GIVE ONE CONTINUES!!
YOUR EXTRA PRODUCE PURCHASES FEED THE HUNGRY IN OUR AREA

With the help of SOSA (The Society of St. Andrews), the Davidson Farmers Market
will collect and distribute fresh produce to food insecure individuals
and families in Davidson and surrounding areas, July - Sept.
DFM gave over 6,000 pounds of produce last year
to elderly and low-income families in Davidson.
   Here's how it works:
1.  Buy produce for yourself, and buy a little extra for someone else.
2.  Place it in one of the produce coolers at the market.
3.  Fill out your tax-deductible receipt at the DFM table for the amount you donated.
4.  At market's end, SOSA volunteers pick up the food and take it directly to local churches, Mooresville Christian Ministries and other aid agencies.

Do you have extra produce in your home garden?   Bring it to the market and  we'll make sure it gets distributed with the rest.
