Kris Reid of K.Leigh Cuisine prepared a phenomenal Korean BBQ Beef on the grill last week with Big Oak Farm beef. She suggests using sirloin, short ribs, kabob meat, or flank/skirt steak, and the marinade recipe is below.
The refreshing and Quick Kimchi was a perfect accompaniment for the beef. Kris used the dressing recipe shown below. The technique: Chop the
vegetables coarsely and toss in the salt. Let stand for 2 hrs, rinse and squeeze out the extra liquid. Mix the dressing ingredients and toss well with the vegetables. The kimchi will keep two weeks refrigerated in an airtight container.
Kris made two kimchi recipes: One with Houston Farm cabbage with celery root and cucumber, and another batch with carrot, celery root, garlic scapes and daikon radish. This technique can be used with a variety of vegetables.
Catch Kris Reid at her next DFM appearance on July 17th, when she'll be cooking with Cackleberry Farm cheeses.
Demonstration times are 9AM and 10AM
Thanks to our volunteer demo team: Li Jane Genson, Jill Stierli and Jane Goodman who have made the cooking demonstrations fun and successful this year!

SUPPORT YOUR COMMUNITY MARKET
The DFM is a wholly community-supported farmers market, unlike the majority which are funded by municipalities or the NC Dept. of Agriculture. The funds for insurance, marketing, educational programs and outreach, tents, tables and supplies and to pay a market manager all come from local businesses, individuals and farmers. It costs about $625 to run each of the 40 markets held year-round.
Some other facts about the DFM you may not know:
~DFM farms represent over 1100 acres of prime farmland
~All the food at DFM comes from under 100 miles, and most within 30-40 miles
~33% of DFM customers walk or bike to the market
~DFM recycles or composts 50% of its garbage
~DFM has grown from 12 vendors to 35 vendors since 2008 and operates through the Winter
Here's what some of the farmers have to say about the DFM:
Tommy Barbee of Barbee Farms says "The Davidson Farmers Market has been a huge step in the right direction for Barbee Farms. This was the first "producer only" market that our farm had participated in with our many years of doing markets. The folks in charge of this market have done things very right. They have created the right mix of vendors to supply most any item that can be grown locally in an amount that will be consumed. They have made this market very sustainable from both a farmer and a consumer standpoint. This community also stood "firmly" behind our farm when we were in the crosshairs of DOT. These folks believe in what they do and have the utmost respect from Barbee Farms!"
Mike Smith of Big Oak Farm says "DFM has been the best market for us that we participate in. I attribute this to the dedicated patrons of the DFM and we really can't say it enough thank you for supporting local farmers. We are also involved in other markets from an administrative point of view, it costs a lot of money to keep a market going. There is a lot of overhead for private markets and it is important for folks to remember the market as well as the farmers. Things like advertising, supplies like tables and tents, market manager travel expenses, manager salary, insurances. The market is just like any other business and has fixed costs in order to operate, only the market itself has no real way to generate income to cover these costs."
We at the DFM are fortunate to work with such a professional, dynamic group of growers, bakers, artisans and chefs. The social and economic networks that are forming between vendors, between customers and vendors and among the patrons is remarkable.
By supporting your community market, you are encouraging something much larger than even the sum of our efforts. What you are doing is working!
So come by the DFM tent this weekend and give a cash, check or credit card donation. You can receive the following in return:
$5 to $24 donation - DFM bumper magnet
$25 - $99 donation - DFM tshirt
$100+ - DFM logo apron
Business donors of $150 or more may also receive a link on the DFM website.
Thank you for your support! |
