Last Saturday, Chef Vera Samuels showed us how to prepare two recipes using Correll Farms' yellow squash and zucchini, herbs from the market and Farmstead Cheese from Cackleberry Farm in place of the Reggiano Parmesan below, and added maple-cured bacon from Grateful Growers Farm.   
 
Many of you wanted the recipes from last week, so we have included them here:

Penne with Zucchini, Squash, Fresh Herbs, and Lemon Zest

Ingredients

  • Kosher salt
    1 lb. whole wheat penne
  • 1/8 cup extra-virgin olive oil
  • 2 zucchini & 2 squash, cut in half lengthwise and sliced crosswise into 1/4-inch-thick half moons
  • 4 large cloves garlic, thinly sliced
  • 2 tsp. finely grated lemon zest
  • Freshly ground black pepper
  • 1/4 cup freshly grated Parmigiano-Reggiano
  • 1tbs. coarsely chopped fresh basil
  • 1tbs. coarsely chopped fresh flat-leaf parsley
Directions
1.  Bring a large pot of well-salted water to a boil over high heat.  Add the penne and cook according to package instructions until al dente.

2.  Meanwhile, heat the oil in a 12-inch skillet over medium-high heat.  Add the zucchini and squash and cook, stirring occasionally, until barely tender and just starting to brown, about 3 minutes.  Add the garlic and cook, stirring occasionally, until the garlic is soft and fragrant, an additional 2 to 3 minutes. Remove from the heat.  Stir in the lemon zest, season with salt and pepper to taste.

3.  Reserve 1/2 cup pasta cooking water and drain the pasta. Add the pasta to the zucchini and squash mixture along with the Parmigiano, basil, and parsley.  Season to taste with salt and pepper.  Toss to combine, adding some of the reserved water if necessary to moisten the pasta.


Zucchini and Squash Ribbon Salad with Red Onion
Ingredients

  • 1 tablespoon red-wine vinegar
  • 1 tablespoon olive oil
  • Kosher salt and ground pepper
  • 1/4 red onion, very thinly sliced
  • 2 small zucchini and 2 small squash (about 1 1/2 pounds total)
Directions
1.  In a medium bowl, whisk together vinegar and oil; season with salt and pepper. Stir in onion, and let stand 15 minutes.

2.  Using a vegetable peeler, slice zucchini and squash into paper-thin ribbons, avoiding seeds. Add to bowl with vinegar and oil, season with salt and pepper; toss to combine.

      "This is sort of my golf game," says Mike Smith. "I really enjoy doing it--it's a ton of fun for me, and I wish I could get big enough that I could make a living at it and do it full-time." Smith and his wife, Dawn, raise all-natural beef at Big Oak Farm, in addition to owning a separate full-time business.  They began to look into selling beef at farmers' markets after the 2007 drought, and they joined the Davidson Farmer's Market in 2008. Besides Davidson, Big Oak sells beef at the Conover and Gastonia Farmers' Markets, Know Your Farms (a food-buying club), and to caterers and restaurants.

      Mike's family has worked the land of Big Oak Farm for more than 150 years.  Currently, Mike and Dawn use the remainder of the family land to house calves that are being weaned.  At two nearby pastures, the couple rents land to graze their Charolais cows, Angus bulls, and older calves.

      Mike and Dawn personally oversee all of their cows from their births.  According to Mike, "If I look you in the eye [and] sell you a product, and I tell you that it's antibiotic-free, hormone-free, [that] it's been treated decently, I know that from birth because we've had it in our complete control its entire life."  Dawn even notes that if a cow becomes sick and needs antibiotics, they will get the veterinarian's aid for the cow to recover, but afterward, they will not sell it as Big Oak beef.  

      Because their cattle have forage-based diets, the Smiths need a considerable amount of pasture land to sustain them.  Mike requires approximately three acres of land per head of cattle; he says that this proportion is the key to a healthy herd. This requirement has limited the growth of Big Oak Farm, though.  Mike and Dawn have the knowledge, equipment, and training to raise twice as many cattle as they do, but they lack the land to support them.  These land limitations reflect a broader trend; as Dawn explains, "North Carolina has lost more farmland since 2006 than any other state in the country."

Editor's note:  The student authors saw firsthand one of the most difficult parts of being a cow-calf farmer - the loss of a calf to coyotes.   According to Mike Smith, the coyote population has increased rapidly while coyote food sources have dwindled, causing record numbers of losses this year.

  • Know Your Farms is hosting Community Camp:  Food, Land and People this summer for kids ages 8-12 in Davidson. The one-week camps include organic vegetable gardening, community service, arts and crafts from recycled items, local food production and field trips on foot. Sessions are June 21-26, June 28-July 2, July 19-24, July 26-30 and Aug. 9-14, and run from 8:30 a.m.-4:30 p.m. Suggested rate is $325 per child, but the fee is negotiable.
