Their annual pilgrimage to Bike Week in St. Augustine led to the discovery of The Spice & Tea Exchange and a new avocation for TSTE of Asheville's Bob and Jill Long. Hooked by all of our easy-to-use blends and rubs for grilling, these RV enthusiasts are now "the ones who steer the ship" in North Carolina. The doors opened in September of 2009, and Jill and Bob have been busy working the floor, getting to know customers, and donating to silent auctions and other charities ever since! Bob's favorite dish is Teriyaki Ginger Rub on salmon with  Dill Sauce - try it out!  Bravo to a great store!

 Our love affair with outdoor cooking heats up May for National Barbeque Month - the beginning of the prime outdoor cooking season!  Cinco de Mayo starts the month with a kick - and so do the recipes for margaritas and fajitas we've included in this month's Exchange. The three day weekend  for Memorial Day starts off the summer holidays and is a traditional time to gather with family and friends. It's the perfect excuse to fire up the grill with our custom blends to ensure your summer cook-outs are a success!
 May's Exchange - The Art of the Grill 
     Does the smell of delicious outdoor cooked food get your juices going? We've collected some of our favorite grilling ideas for a perfect cookout with friends and family for Memorial Day! Our plethora of blends devoted to grilling makes cookouts a breeze.  Just brush your meats with olive oil and one of your favorite TSTE Blends or Rubs.  Let stand 5 minutes or more, and grill to desired doneness.  Use a meat thermometer to get the temperature just right.  We've listed our favorite suggestions for you here, along with some suggestions for sides for your Memorial Day cookout menu.

Grilled Corn
 
8 ears corn on the cob
2 T melted butter to brush on the corn
4 T of your preferred flavor TSTE sugar: Green Chili, Habanero, or Sweet Onion 
 
Carefully peel back husks from corn, leaving them attached at the base. Remove silk from corn and discard. Smooth husks back over corn and tie with a piece of string to keep closed. Soak corn in cold water for 1 hour. When ready to grill, drain corn, shaking and squeezing off excess water. Open husks, and brush corn with butter and sprinkle with TSTE sugar.  Smooth back over and retie string.  Place on grill 4-6" from medium high heat or coals and grill for 15-25 minutes until corn is tender. Turn corn frequently while cooking. Remove string and peel back husks to serve. Serves 8. 
 
 
Grilled Vegetable Kabobs

12 new red potatoes
2 onions
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
12 large mushrooms
12 cherry tomatoes
1/3 cup butter
1/4 cup grated Parmesan cheese
Prepare and preheat grill. Peel a thin strip around the center of each small new potato and place in saucepan with onions. Cover with water, bring to a boil, and simmer for 6-8 minutes until potatoes are barely tender. Drain well. Cut each onion into 6 wedges. Seed bell peppers and cut each into 6 wedges.  Melt butter in small saucepan and stir in cheese and Herb Sesame Blend. Thread vegetables onto 12 metal  or bamboo skewers and grill 4-6" from medium heat for 8-10 minutes. Brush kabobs frequently with butter sauce and turn frequently, until vegetables are tender. Serves 6

Cinco De Mayo Margaritas & Fajitas!
 

No time for a siesta, it's time to fiesta!  May 5th marks the 148th anniversary of the Mexican  victory at the Battle of Puebla & a reason to celebrate Hispanic culture with these recipes.  Try

 
Frozen Lemon Berry Margaritas
 
4 lime wedges
3 T of your favorite
TSTE sugar: Blueberry, Lemon,Lime, Raspberry, or Strawberry
2/3 cup thawed frozen lemonade concentrate
1 cup frozen unsweetened raspberries
2 cups ice cubes
1 package (16 ounces) frozen sliced strawberries, partially thawed
1/2 cup frozen blueberries
1/2 cup tequila, optional
 
Use lime wedges to moisten the rims of four margarita glasses. Set aside limes for garnish. Sprinkle TSTE Sugar on a plate; hold each glass upside down and dip rim into sugar. Set aside. Discard remaining sugar on plate. In a blender, combine the lemonade concentrate and raspberries; cover and process until blended. Press mixture through a fine sieve; discard seeds. Return raspberry mixture to blender; add the ice, strawberries, blueberries, sugar and tequila if desired. Cover and process until smooth. Pour into prepared glasses. Garnish with reserved limes. Serves 4.
 
Fajitas on the Grill
 
 ½ cup lime juice
¼ cup white vinegar
1 lb flank, round steak, or chicken in ¼ inch strips
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1 onion, cut into rings
12 flour tortillas
1 cup shredded Monterey Jack cheese
2 tsp
TSTE Adobo Seasoning
 Salsa, sour cream and guacamole to serve
 
Combine the vinegar, lime juice, and TSTE Adobo Seasoning in a bowl. Marinate the meat in this mixture for 20 minutes. Preheat the grill to medium. Put a couple of drops of water on each tortilla and wrap them all together in tinfoil. Place them on the grills, turning once during the cooking time. Place the meat in a grilling basket over a high heat. Turn down the heat before adding the onion and bell peppers. Cook until the meat is done to your liking and the peppers begin to soften. Remove everything from the grill, fill each tortilla wrap with the steak mixture, some salsa and cheese and roll up, with the seam underneath. Serve with sour cream and guacamole.
