lidia spring with artichokes and eggsSpring has sprung and with it some of my favorite fruits and vegetables! Artichokes, asparagus, peas, lettuce, fava beans, and the list just goes on and on. In all of my restaurants, you will find an array of dishes using these ingredients- whether in soups, salads, pastas, accompanying meat or fish, or simply by itself.
 

And, with Easter just around the corner, it's the perfect time to plan an Easter feast using all of spring's freshest ingredients for your friends and family. Lamb is the traditional Easter meal in my home, and this year, I am planning to make a succulent Braised Leg of Lamb,  an ideal dish for such a festive cherry jam tartoccasion since a big leg will easily serve eight or more people. Try this dish paired with my recipe for Scaffata- braised spring legumes- or my Roasted Potato Wedges. If you are thinking of adding a pasta course to your Easter menu, try simply using the sauce from the braised leg of lamb will compliment your favorite pasta beautifully.And a festive Easter menu is never complete without something sweet, such as my Cherry Jam Tart. And, as I always say, "Tutti a Tavola a Mangiare!"

Skillet-Cook Your Vegetables!

asparagusCooking vegetables in a large skillet is very much a part of Italian cooking tradition. Tradition, though, isn't the main reason I skillet-cook so many of my favorite veggies- it's because a wide pan allows almost any vegetable to cook to perfect tenderness, and most importantly retain some texture to the bite.What better time of year to skillet-cook your favorite vegetables than spring! Skillet Asparagus- you'll find the flavors become concentrated, allowing the natural sweetness to coat each bite. And, as a natural complement to the skillet asparagus, I add some butter and cheese. When these skillet asparagus are on the table, my grandchildren never let one go to waste! Simple, nutritious and delicious!
