This soup is made with French Lentils.   

What's different about these French Lentils?  They're green and they're gorgeous. I bought some a few weeks ago and was dying to use them. With all this cold weather, soup sounded like a good idea.   

I decided I didn't want to make a mushy pureed lentil soup because I wanted to see those beautiful little green lentils.
