PUMPKIN SIDE

As a certified pumpkin junkie, I'm always trying to think of new things to do with these merry little squashes. Besides carving for Halloween, and pie-ing for Thanksgiving, I like to use pumpkin as a side dish for hearty chilly evening meals.
One of my favorite ways to service pumpkin is rather simple, but so few people think of it. I take a smaller pumpkin (any kind will work), peel off the skin and scrape off the guts (the stringy and seedy part). Cut the pumpkin into 1 to 1 1/2 inch chunks. Put into a roasting pan with some butter (about 4 tablespoons) or a little drizzle of olive oil. Then roast in a 375° oven. Time will vary depending on how much pumpkin you add, but figure about half an hour.
When the pumpkin cubes are slightly browned, I remove from the oven and put them on a paper towel to drain. Then I sprinkle with salt, pepper and a little bit of cinnamon. If I'm feeling daring I might add a dash of cayenne pepper - but just a little dash for me. Mix and serve warm.

The Thanksgiving Herb - Sage
When many people think of the smells of Thanksgiving, one of the aromas that comes to mind is that savory fragrance of sage stuffing. There's a good reason to include some sage in a big meal like a holiday feast - it is a digestive aid which helps reduce bloating and gas.
Some form of sage (Salvia officinalis)has been used by almost every culture for thousands of years, whether medicinally or culinarily. In Europe, after the Crusades there was a saying, "Why should a man die who grows sage in his garden?" The botanical name Salvia translates from Latin to "save or heal." That's a lot of faith in a little herb. And it seems that faith is well earned.
Sage is one of the herbs that serves a multitude of purposes. It is aromatic, a stimulant, antispasmodic, antiseptic, and immune stimulant. It is wonderful for reducing perspiration and at one time was prescribed to reduce sweat, especially for those suffering from sweaty fevers. A tea of sage will help menopausal women with hot flashes. Herbwisdom has some wonderful insight into the many uses of sage.
Whenever we have sore throats or tooth problems, I make up a tea of sage and add just a pinch of salt. When it reaches room temperature, we gargle with that or use it as a mouth rinse. It's so soothing and makes your breath smell good too.
Sage is also a wonderful hair rinse and helps enhance dark hair. In a face steam it helps open and cleanse your pores. That's why we include it in our Mela Tae's. It's also a part of our Muscle Rubs for its ability to relax.
Smudge sticks, or sage incense also works wonders on clearing negative energy from your home.
