Just Desserts for Bay
We often think of Bay leaves as those dry leaves we drop into soups,
stews and sauces. It's a main meal type of herb. However, this pungent
little leaf is more.
The recipe appears in the International Herb Associations book "Bay (Laurus nobils)
Herb of the Year 2009". This is a fascination collection of
information, tips and recipes about and for Bay. I took the recipes
from the book and played with them a little, and came up with this
yummy dessert that's perfect any time of year.
Bay Syrup Make a lot and store in the refrigerator for
up to 10 days. It can also be frozen. Bay syrup can be used to flavor
drinks, over pancakes, let your imagination run wild. The fragrance and
flavor is spicy and sweet.
1 cup sugar 1/2 cup honey 1 1/2 cups water 10 bay leaves (fresh works best but you can use dried)
Put
the sugar, honey and water in a heavy sauce pan. Add the bay leaves
(bruise fresh ones slightly with a spoon). Bring to a low boil over
medium heat. Cover and remove from the heat. Let it sit for an hour, or
until room temperature. Remove the bay leaves, squeezing lightly to get
out all the goodness. Place in a container and refrigerate.

Jumping Juniper The Wonder of the Juniper Berry
I have a very distinct memory. It was the evening of some family get together at my grandparents house. My son, when a mere babe of probably less than one, was being fussy and crying while I was trying to help my mother in the kitchen. My father scooped him up and walked him around the room. He pointed to his just poured martini. "This," he said in a very stately manner, "is a martini. It is made with gin. Gin is made from juniper berries which grow on specific ever green trees." He went on to espouse the history of gin and juniper and its many uses. My son was silent and fascinated.
I don't know if my son (now 26) remembers that lesson, but it stuck with me. I find juniper to be a lovely ever green tree or shrub. When the berries ripen to a rich blue, the tree welcomes in flocks of birds. Junipers grow well along the shore.
Besides being the main constituent of gin, juniper berries are used extensively in culinary, medicinal and aromatic endeavors. Its use dates back to pre-biblical times.
In the kitchen, juniper berries can be used in marinades or as seasoning, working particularly well with game meats and poultry. They add a slight tart bite of gin to sauces or any dish that uses alcohol. It makes a wonderful addition to a duck marinade or sauce.
In aromatherapy, the woodsy, sweet fragrance of juniper is used for purifying the air. Archeologists have found it in tombs and homes at digs throughout the ancient world. It is also said to be an stress reliever and aphrodisiac. It can also help repel insects.
Juniper also has many medicinal properties that have been used through out time. In a steam it helps with bronchitis relief. Eating the berries can help with stomach issues. Topically, it helps with muscle sprains, arthritis, and rheumatic conditions. It's strength with relieving muscle pain and strain is why it's an important ingredient in our Muscle Rubs.
There is caution to be used with junipers bright little berries though. Over indulgence can result with kidney issues and should not be used during pregnancy as it can be an abortifacient.
