The second annual Grafton Music Festival takes place this weekend, with outdoor concerts all weekend long.  The fun starts Friday night, with a free concert by Simba, an eight-piece world beat dance band, performing in the area between the Old Tavern at Grafton and our new Specialty Cheese & Wine Shoppe.  On Saturday at 2:00, Red Molly performs another free concert in the same space, showing off their all-female folk rock harmonies.  The pinnacle event takes place Saturday night at 7:30 pm, when the Vermont Symphony Orchestra performs under the stars at Grafton Ponds Outdoor Center, followed by a spectacular fireworks display.  This concert is a benefit for the Brattleboro Museum & Arts Center; tickets can be purchased at several locations in advance or at the gate, which opens at 4:00 p.m.  On Sunday at 10 am, a special church service at the Grafton Church will feature the Stockwell Brothers.  In addition, there will be local artisans, a children's carnival, food vendors and more in the village on Saturday afternoon.

Vermont Cheesemakers FestivalPlease get your tickets now for the second annual Vermont Cheesemakers Festival Sunday, July 25 at Shelburne Farms in Shelburne, Vermont.  Last year sold out well ahead of time, and even though the ticket count has been increased this year, we expect another sell-out.  Here's the line-up:  50 cheesemakers, 20 wineries and breweries, 15 artisan food producers, demos, dinner, and....what? Yes, we agree.  Quite possibly the perfect event.

What is Pasteurized Process Cheese?

 
Did you ever notice that most flavored cheeses are labeled "pasteurized process cheese" or "pasteurized process cheese food" or even "pasteurized process cheese spread?"  It's even sometimes sold in spray cans!  What's the difference?  Cheese--real cheese--contains milk, salt, enzymes and cultures, all of which are natural ingredients.  Pasteurized process cheese is a food product made from regular cheese, and almost always with the addition of whey, emulsifiers, milk, salts, preservatives, and food coloring. (Wikipedia)  Process cheese is blended and heated with emulsifiers, such as sodium citrate.  This process is less expensive, and the resulting product has an extended shelf life, is mild and melts easily.  Why don't we do it?  Because it's not cheese.  Even the FDA says so.
